@@xero2715 yesss! and you might find different conversion rates depending on which website you're on and then you end up with a mess. So confusing. Funny, though, how you called it "the real units" :))) but I agree
@@melii0melissa I can't tell you how many times I've accidentally had to double my recipe because I accidentally did 250g instead of 125g from my not being able to do maths in my head 😅 Or too much salt because I did tablespoon instead of teaspoon
@@xero2715 :)) I feel you! The weirdest thing for me, when seeing recipes using cups&stuff, was that these people use a teeny-tiny measuring cup as a measure for "teaspoon", instead of using an actual teaspoon :))) So not even this makes sense..
Before mixing the pumpkin puree with the other ingredients, put it in a skillet and gently heat it for 15-20 minutes, stirring occasionally. This will help release the natural pumpkin flavor, so that the finished product will taste more strongly of pumpkin. Works with both homemade and canned pumpkin puree.
This turned out Uh! Maze! Ing! Took me about 4 hours from start to finish but TOTALLY worth it!!!!!!!!!! I suggest baking the pumpkins and making the dough the night before baking. HUGE HIT! So perfect! So much difference and so much more delicious than store bought. It was all gone in no time.
@@MextizaCalifa I have to admit I added a little maple syrup, but found out it was probably not needed, but still good. With all the carmelization in the milk reduction, I dont think you will miss brown sugar
He needs to go more off the rails with that part. "Or just do what you want, I dunno. You wanna know what else dunno?" Bad example, but that's why I don't have a RU-vid channel. (Oh wait.)
As a Scandinavian, I always wanted to try pumpkin pie. It's so iconic to American culture, and I love American cuisine. Especially soul food and comfort food, like chicken and waffles and banana pudding. Finally gave it a go. It was real nice, even with the "halloween" pumpkin and sweetened condensed milk from a can. Thanks! Next I want to try to make Gumbo 😁 Edit: was lucky to find the smaller pumpkins of the Hokkaido variety, and had to make it all over again. 10/10 in the yum yum scale. And no need for cheese cloth this time around!
I just moved to Sweden (near Stockholm). Do you know where I can buy pumpkins? I can’t find them at the big chain stores like Ica Maxi, Coop, and Willy’s 😢😢
@@nina-um4mm Hey Nina 👋 I would imagine most if not all the supermarkets carry "Pumpa" between Halloween and approx. May. The smaller stores usually comply when you ask for them to acquire something they do not sell. If you cannot find Hakkori then butternut or something similar is supposedly just as good, and a lot better then the carving pumpkins! I've been making this a lot and it always turns out amazing. Good luck 👌
@@nina-um4mm I typically buy my butternut pumpkin in willys, but they usually come to the stores in season so beginning of october you should find one
Back in the 90s, the pumpkin carving kits you could get for Halloween with the tiny orange pokers and scoops had a pumpkin pie recipe on the back, with instructions for how to roast a pumpkin. My mom followed the recipe on a whim one Halloween and we've never gone back - real pumpkin is just SO much better than the canned stuff! She always brings the pie for Thanksgiving and I've started making it when I moved out too. People think it's a secret family recipe, we just don't mention where it came from originally!
I hope you bought pie pumpkins and didn't try to use your leftover a jack-o-lantern. They don't include those recipes anymore because people WOULD do that, not understanding the difference, and since Jack-o-Lantern pumpkins are not made to be eaten they are sprayed with pesticides and whatnot that are not safe to consume. Made a lot of people sick, plus they taste awful. I have to tell this to people every year, especially for how popular it is to waste absolutely nothing, people don't wanna just throw them away. But they do make great compost.
@@GiraffeFlavoredCondoms You may have just saved me. I watched some videos saying it was okay to use them but to just add a bit more sugar. 😬😬 I feel like this is something more people should know... Did you learn from past experience??
@@GiraffeFlavoredCondoms that's not completely true. Most people have common sense and wash their pumpkins before cutting or carving. The majority of pumpkin farms are organically grown with additional fruit trees and don't spray pesticides as they are banned - the one's that make you sick. We have ate the same pumpkins from the local patch my entire 53 year's on this Earth & never been sick from any pumkins, apples, ciders, zucchini, all the items they sell & make fresh in the store they run. They also sell to the local grocery stores & their apple cider & cider cookies are one of the only ciders sold commercially. Pumpkin is also used as a vegetable as well just like a sweet potato or squash would be and added to soups, etc. As long as you're cleaning your pumpkins and breaking them down by baking them til fork tender you should have no problem making a simple pumpkin pie recipe.
I made this yesterday as a warm up to the coming holidays. Holy hell, it’s better than the store bought one(obviously) but it’s less sweet and it tastes more... natural in a sense. My family loved it and now wants me to make it for Thanksgiving
Next episode: Josh: so I was just sitting there and I was breathing fine but imagine if I made my own oxygen. Trust me it looks hard but all u really need is a particle accelerator. Or I mean you could just breathe normal oxygen like a scrub
Josh: It's so easy and all you need is a hydrogen peroxide, manganese dioxide as a catalyst, an Erlenmeyer flask, a stopper, a glass straw with a funnel, 2 tubes, a tub, several bottles for gas collection, water, and a drill...
Yes he does. The videos are funny, entertaining and informative. All the recipes that I have tried from his channel are amazing! I want to try making the chicken tikka masala next, made with my homemade yogurt of course :).
You, sir, have helped me immensely with my cravings for American food. I can't get alot of inexpensive American foods in The Czech Republic, so I've been craving my homeland way too much. Though, this place doesn't have sugar pumpkins, so I only had to substitute it with Butternut Squash. Tastes exactly the same, just a different winter squash! Still, thank you for the recipe!
I LOVE how you said “You can thank my mom” when you have the tip with carrying the dough to the pan without tearing 🥰. Moms are just the best! Clearly she is one of the best! And with all that said: Thank you Joshua’s Mom!!!❤️❤️❤️
I followed ALL of these instructions and got the best pie ever. I did double the ginger, and use two different kinds of ground cinnamon! The carmelized milk reduction is the most amazing thing I ever tasted, and really made the pie great. i used a medium sized pumpkin ( not a pie pumpkin particularly) that I had grown from seed and it was very rewarding compared to watching them collapse in the compost pile in January!!! Even roasted the seeds in tamari and olive oil. what a treat! Thank you for this comprehensive and awe inspiring recipe! You hit all the high notes!!!
Joshua, whenever I bake a pumpkin or butternut squash, I always turn it skin side down for the last 5 minutes and add an additional 5 minutes baking time to the end. This way the steam escapes and I end up not having to drain or squeeze out the liquids.
He needs to collaberate with Epicurious. Special guest level three chef. "Hi. I am Emily, and I am a level one chef." "Hi, I am Lorenzo, and I.am a level two chef." "Hi, I am Joshua, and *mutters off camera* I don't know what I am doing here."
Tried this recipe just yesterday, and got the most beautiful and delicious pumpkin pie I've ever had. (Though I admit all pumpkin pie I've had before were store-bought.) My gf, who is obsessed with pumpkins during autumn, loved the pie too. Thank you for the amazing recipe, Joshua! :)
Josh ! I made this pumpkin pie recipe today and it has absolutely changed my life ! The sweetened condensed milk is amazing ! The roasted pumpkin..everything. this pie is divine ! Thank you for sharing your wisdom !! 🤩
That's a miracle! I wanted to buy a pumpkin tomorrow and was looking for a dope "extra" recipe, and here it is 🔥 also I prepared a jar of sauerkraut today, ate about a half immediately 😂 2% of salt is just perfect.
Other cooking channels: “okay so first, we’re going to take this can of premade pumpkin pie filling and put it into our nice premade crust. We pop it into the oven and its that easy.” Seriously thank you for actually making it from scratch.
Depends on the pumpkin type you use, but generally I think true pumpkin pie is less sweet. Not sure if that is because of the type of squash (pumpkin is a swish) or whatever they add to canned stuff
I made the pumpkin pie exact to the recipe except for store bought condensed milk and it was FANTASTIC tasting. Never buying store bought pumpkin pie again. Tips for anyone who makes this, when you are squeezing the pumpkin puree through the cheese cloth DO NOT stop until the liquid comes out drop by drop otherwise your pumpkin pie will still be more moist than expected. For those wondering how much usable pumpkin puree you are roughly going to get out of a small pumpkin sized similarly to what he used in the video it is about 40%. If your pumpkin weighs 1500g then you'll likely end up with around 600g usable puree after baking and squeezing the water out.
So I'm pregnant and I've been craving pumpkin pie. I live in the country and there's a pumpkin farm 5 minutes from me. Every time I drive by I tell my toddler "next month mommy is going to get some pumpkins to make us pie!" I guess RU-vid was listening because this video was reccomended today 😂 not disappointed. Can't wait to make this!!
@@autumnolguin1990 pumpkin's are plentiful right now both in the store and in the fields. You can use any type of pumpkin you can find to make pie. If it's a larger pumpkin you just need to adjust and add more sugar and spices.
Just remember, there are raw ingredients and refined ingredients. Raw ingredients have to be purchased, but refined ingredients can be made with kitchen equipment in your house and raw ingredients. Granulated sugar is an example of a raw ingredient while powdered sugar is a refined ingredient you can make with granulated sugar, corn starch, and a food processor. It's also cheaper to make your own powdered sugar ,net cost wise, than it is to purchase it.
@@TheMajinHermit you can eat the ones for carving! They are great for soups. The sugar pumpkins which americans use are just more sweet. And since they over sweeten things anyway if you use condensed milk it should be good enough
It’s so weird to see how american pumpkin pie is made, in scandinavia pumpkin pie is a savoury thing and i’d never even heard of ”canned pumpkin” before watching this video
RoninXDarknight ooh that’s pretty interesting! Here we do a normal savoury pie crust with chopped up pumkin and some spices in it, some people like to put cheese in it too.
MY BOI JOSHUA COMIN THRU WITH THE SPONSORS!!!! congrats my dude!!! and you’re so close to 1 million! im so proud and super excited to see you grow even more :’)
I always use this recipe and everyone loves it!! I've even heard someone say it's the best pumpkin pie they have ever had! Thanks again. I also freeze the pumpkin puré to make this when it's out of season.
I grew pumpkins to make pumpkin pie and pumpkin rolls from scratch. I was recommended your cooking videos. I usually hate watching people cook (unless I'm there to eat what they just cooked), but this was not bad. I've never cooked from scratch 🤞
@@zirvufarz8277 so I have this prehistoric bacteria here. We're gonna let this guy breed over the course of millions of years. Once he's done, we're gonna have a baby calf. Give that guy a quick 5 day stint in the pastures. By then, you should have enough manure for some great fertilizer. While that bacteria was evolvin, make sure you pick out the ferns and let those evolve second. Hopefully around the time you get your first cow, you'll have a few pumpkins to plant in that fertilizer
I made this yesterday and wow thank you sm. I had never made pumpkin pie so I was nervous making it from scratch(I used premade crust and condensed milk bc we had that). But it was not too sweet, just right. The flavors blend beautifully.
Fantastic recipe! Made this today now that fall is in full swing. This is how pumpkin pie is meant to be and categorically better than the canned pumpkin puree and condensed milk. No sugary after taste! Crisp, buttery, and flaky crust. (Thank you for the recommendation to bake first before pouring the custard filling). I will note don't forget to add vanilla (preferably high quality if possible!) It's in the recipe notes, but not in the video. Highly recommend making whipped cream w/heavy cream, sugar, and vanilla. Fresh nutmeg in the whipped cream and on top of the pie takes it to another level. I will say this all and all took about 3 hours to make as first attempt, but 100% well worth it. Thank you Joshua!!
I made your pie the comnents were Boyfriend " omg best pie I've had my whole life" eats half of it in one sitting Friend " I hate pumpkin pie - but omg it's amazing" eats other half in one sitting Together " can u make another pie we want more " Makes second pie lolololol I think they like it
Making this tomorrow for our tiny thanksgiving gathering. (Household members only). Since I made it last year with home garden pumpkins, I’ve been super excited to do it again. Thanks for the new tradition!
I usually love doing anything in the kitchen but "we're gonna make our own condensed milk" is the first time in my almost 30 years of lifw watching cooking stuff that I've ever gone "why tho?".
@@alexisjauregui3523 It’s milk and sugar. You probably can’t fuck this up, but you also can’t improve it. It’s like making your own ketchup: Not worth it.

Hey Joshua! I'd like to thank you so much for making this recipe from scratch; I live in brasil and many essential ingredients of the pie are inaccessable to me (pumpkin puree and pumpkin spice namely), so seeing someone go about it from scratch really inspired me to go ahead and try it. So far, made this recipe four times and it's been a huge success!!! That being said, pie pumpkins don't sell here at all and - instead - I've had to adapt by using japanese pumpkins (known as kaboja pumpkins in brasil). I wanted to ask; if pie pumpkins and puree aren't readily available, do you have any suggestions for a best alternative to those ingredients?
I spent the morning with kids following your recipe for fresh pumpkin pie and making one from Libby's puree and their recipe. The home made one was sooo delicious! We plan to make a scratch one for thanksgiving this year!
Interesting additions to this recipe, as the time of year is nearing again: Add ~1 cup medium-chopped or crushed pecans to the filling. Add a banana to the filling (for real, you won't notice it in there, but once you did it, you'll notice it missing). Drizzle some caramel over it. Serve with ice cream. For Dutch people: add "speculaaskruiden" instead of manually mixing the spices.
I'm making this for our Thanksgiving this year (2020) - we're doing it Friday instead of Thursday 🙄 Anywho, I've roasted my own pumpkins for years but frequently wussed out on the crusts. This crust is divine!! Thank you thank you thank you!!! I desperately tried to make the carmaelized milk but the magic eluded me this time. I will work on that skill in the not too distant future. Thank you so much for your delightful, delicious and informative videos. You've been a real bright spot in this less than ideal year 👍🏻 keep up the great work!! Stay healthy!
Joshua, I tried this recipe today for Thanksgiving. This was my first time making the "sweetened condensed milk" from scratch. I also added a tablespoon of molasses for a darker richer flavor. I'll let you know Thursday how it comes. Best regards and Happy Thanksgiving! Paul
I make roasted pumpkin soup every year with sugar pumpkins. I didn't know how easy is was to make homemade pumpkin pie I'm definitely going to need to try this now. It looked so good!! Maybe I will do both and we can just have a all day pumpkin day! :)
Please do a video/series on kitchen basics (kitchen starter kit, knife skills, essential spices and what they do, basic recipes everyone should know) I love your videos but can’t do a damn thing and need somewhere reasonable to start
Thank you so much for showing how easy it is to bake pumpkins and puree them! I did it and made the most delicious pumpkin pie. I will never used canned again. The puree was richer and denser.
alright josh i tried this recipe last year and made 6 pies. then when I wanted to make more the pum[kins were gone 😭. so now as soon as my grocery store brought in the sugar pie pumpkins i went nuts. i made 10 pies already so far only ate 1 and gave out 8. seriously the secret here is the condensed milk. this year i made my own along with my own whipped cream and holy shit did it elevate it even higher. i will be making this til i die, seriously the best pumpkin pie i have tasted
if you don’t mind me asking did you cover your piecrust wall cooking it with a shield like he did? I am in making one of these for Thanksgiving and I’m worried the crust will burn
@@maryburrola3701 yes i did shield it since 1 hour in the oven is too much for a pie crust, (tested it and it burned) i made a shield from foil and loosely made it fit and it was perfect
I think a couple of your measurements may be off. Typically this is how I’ve seen it: Flour: 1 cup = 125 g Butter: 1 cup = 226 g (1 stick = 113 g) Can you please let me know which is correct - the standard or metric measurements? Thanks, can’t wait to make this!
It may depend on the flour. Some of them are lighter, some are heavier. I recommend measuring it in cups and then putting it on a scale to see how much is your flour
You are right! I just used measurements from the website and its off. It's half the amount of flour. But if you follow what he says in the video, then it's correct. Because of that I accidentally made twice the amount of crust I wanted, but hey, now I have another pie crust in the freezer ready to bake 😂
I literally just grew these pumpkins to try this recipe 🤣 I've never eaten pumpkin pie before 😋 and it's summer here in Australia so perfect time to grow for new recipe trials
Just made this yesterday and came out perfectly! not a crack to be seen, the crust was wonderful, and the filling was the exact texture. I didn't have a blender or food processor so I used my stand mixer for the puree and my hands for the butter, but it all came out just fine! I bet you could even use a cheap hand mixer for the pumpkin if you're in a pinch.
I made this pumpkin pie in the summer, it was delicious and my whole family enjoyed it! I made my own condensed milk and crust but bought pumpkin puree. The bottom of my pie puffed up a lot and after I pressed it down it cracked, but that´s okay. I will be making the pecan pie in a few days!
I’ve been following this recipe for 3 thanksgivings now ( pie pumpkin is roasting in the oven as I type). I don’t like pumpkin pie, but my kids loved it so I made it. Now it’s become the only pumpkin pie I’m willing to eat and enjoy! Thank you!
I've honestly never had a "favorite channel" until now, and cooking isn't even one of my main hobbies lol. Thanks for the awesome content Joshua!! Future recipe suggestion: Lemon Bars? but only if you grow the lemons first. Or you can just buy them from the store... I guess *shrug emoji*

I’m sooo glad this came up on my recommendations because i bought pie pumpkins today for this reason! How did i go every other Thanksgiving and Christmas without making a homemade pumpkin pie
Making this TO-day. Will let you know how it turns out. Update: not bad. Needs more sugar but not bad. Did not do the crust but did everything else. The sweetened condensed milk was incredible! Sweetened condensed milk took way WAY longer than 25 minutes. Oh...I missed he said "when it becomes room temperature". DUH...
No one: Joshua next episode: So we're going to make our electrons. It gives food an added flavor. Make sure you find the particle accelerator that has the big holes, not very small. Trust me, it's worth it. You could just use other electrons but it's so worth it
