How to make this soft and fluffy Purple Marble Loaf bread made of sweet potato.
Here's what you'll need:
200 grams purple sweet potato (boiled and cooked until fork tender)
DOUGH:
1 cup milk (250ml)
1 egg
3 tbsp sugar (45g)
1 and ½ tsp instant yeast (5g)
3 cups bread flour (375g)
1 tsp salt (5g)
3 tbsp unsalted butter (42g)
1. Boil about 200 grams purple sweet potato until fork tender.
2. Mash until smooth. Set aside.
3. In a bowl, mix together milk, egg, sugar and yeast.
4. Add flour and salt.
5. Mix until dough is formed.
6. Add butter and mix until fully absorbed.
7. Knead until smooth, about 5 to 7 minutes.
8. Divide dough into two portions.
9. Smooth into ball. Place in a bowl with oil and cover to proof.
10. Add mashed sweet potato the remaining dough. Knead until incorporated.
11. cover and let it rise until doubled in size.
12. Punch air out. Roll out both and place purple dough on top.
13. Pressing to seal. Then roll tightly into a log.
14. Place in a 9x5x4 inches loaf pan.
15. Cover and let it rise for 30-40 minutes. Preheat oven at 340F or 170C.
16. Bake in a preheated oven for 35-40 minutes.
17. Let it cool down completely.
18. Serve and enjoy!
