We love fried catfish in Mississippi. I cut my fillets into smaller strips because I like mine extra crispy. I make tartar sauce with mayo, sweet relish, lemon juice, and a little Tony Chachere’s (sp?). Meal fit for a king!❤️

My family use to have hugh fish fries. It started out my dad would just have his employees to eat. It ended a couple of years ago where we would have 100 or more people out to eat. People would bring covered dishes and my family was musically inclined so we would have music while we ate.
Wow! @7:25, that fish is looking SO VERY delicious! I'm a VERY southern Hoosier lady. I've never heard of adding clams to tarter sauce. Sounds good, though! 😃 I'm only about 3 miles north of Louisville, KY. Us Hoosiers have always considered ourselves (this area) southern. We LOVE ALL the southern foods you cook up, Paula. My daughter & I never missed your show (2002, she was 8 years old). We'd watch it right after she came home from school. So, needles to say, we both love you. 💗 Never missed a show!! She's 26 now, & took a trip to your restaurant, & store, about 7 months ago. She continually talks about the food, etc. 😃 She brought back many of those, "Butter Y'all", yellow items I spy in your kitchen, just for me. ❤ (I also have the pretty, purple, 'Hey Y'all!' pop-socket on my cell phone. My husband fishes a lot and he used to throw away catfish until I found out and told him don't do that anymore! Now, he's bringing everything he's allowed to bring home including stingrays! I got some fresh ones right now I'm about to clean and fry! Love this recipe! Love you Ms. Paula!🥰

A transplanted southerner living in California, I LOVE catfish. When I say that a lot of people look at me funny. 😲(They just don't know what's really good). When I was a child, my parents would go down to the Red River in SW Arkansas and buy catfish that had just be caught, take it home and fry it. The only problem for me was my mom made me go through it with my fingers looking for bones before I could eat it!!!

I grew up eating Alabama River catfish. My maternal grandparents had a cabin on the river. We would catch them by day and eat them at night. Wonderful memories! ❤️

Oh boy!! Right down my alley!! Fish. I love fish with tartar sauce and malt vinegar, sometimes with ketchup and mayo mixed together. I like to eat sardines, too. Yes, sardines. I think my dad or my grandparents got me to eating a can of them when I was a kid. I can them with mustard, steak sauce, just about anything. My mom can't stand the smell of them, so I have to eat them outside. You can tell I have strange tastes for things. 😊

use a deep fryer sometime in the future...........the fish comes out much more crispy and better tasting.........only way to cook. pan frying went away a long time ago in my house. and i still have a full set of cast iron cookware when i do get the urge.........lol.............great show Paula, you still look young and beautiful as ever....................

Love the fact you use dill pickle relish instead of the sweet. I obtained a tartar sauce recipe from a French chef ( a friend of my fathers) way back on 1947 it is loved by all my family and friends. A sweet fish ( like catfish) needs a counterpoint to enhance it’s flavor. Love your videos, thank you 🥰!

Honey, love me some good ole southern fried catfish! I would always go cane pole fishing in the spring time with my granddaddy and we always would catch us a big ole mess of fish to fry that evening. My Nana would make hush puppies and some buttered grits to go with the fish. Delicious! ✌️💕

I live in Valdosta, Ga. and my mother always said the same thing about salting fish. She said you need to do it before you cook them or you will never get it salty enough. That goes for grits too, have you ever noticed that once they have been cooked w/o salt you can't salt them enough to be good!! Keep the videos coming! How is Aunt Peggy's back?

I use grapeseed oil to fry fish since it has a higher smoke point. I love catfish, it's texture is softer but it's very tasty. I've never heard anyone pronounce Crappy like that....I've always heard it pronounced CrAUppy. AU sound...like Crop.

Up in Wisconsin every Friday is Friday fish fry. Everywhere u go someones got it. But we usually stick to cod or walleye up here. I don't think I've ever tried catfish
Mrs. Paula I had visited your restaurant in October of last year with my mom and we loved the food and the restaurant was beautiful the service was great we had ordered your fried green tomatoes and we fell in love with the red sauce served with the tomatoes I don't know if it was marinara sauce or like a cocktail sauce but it was delicious I was heart broken when I didn't find it in your shop down stairs could you show how to make it please
