Caramel Payasam Recipe in Pressure Cooker
Ingredients:
1 cup sugar
7-8 teaspoons of Gobindobhog chal or Jeera rice (preferably raw rice)
1/2 cup water
1-liter milk (for final cooking)
7-8 broken cashews
2 pinches of salt
Instructions:
1. Prepare Caramel:
Take 1 cup of sugar in a heavy-bottomed pan.
Heat the sugar over medium heat, stirring continuously until it melts and turns into a golden brown caramel.
Once caramelized, pour it into a bowl and set it aside.
2. Cook Rice and Milk:
In a pressure cooker, add 7-8 teaspoons of Gobindobhog chal or Jeera rice and 1 cup of milk.
Close the lid of the pressure cooker and wait for 2-3 whistles, or until the rice is well cooked.
3. Add Ingredients:
After the rice is cooked, open the pressure cooker and add 1 liter of milk, 7-8 broken cashews, and 2 pinches of salt (salt enhances the flavor).
Also, pour in the prepared caramel into the mixture.
4. Cook Until Thick:
Mix all the ingredients well.
Cook for another 10-15 minutes, or until the payasam thickens to the desired consistency.
5. Serve:
Once the payasam reaches the desired thickness, turn off the heat.
Serve the caramel rice payasam hot or chilled as per preference.
