This is a super moist and delicious Vegan Fruit Cake packed with dry fruits with all the flavor and spices of the classic Christmas Fruit cake. Unlike traditional fruit cakes, it requires no prior alcohol feeding and does not need to be made days in advance. Perfect for the last minute baker!
Ingredients: (makes one 8.5" x 4.5" loaf pan OR small (6 cup) Bundt pan):
1 2/3 cups (200g) All purpose flour
1 tsp Baking soda
1/2 tsp salt
1/2 tsp Ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/4 tsp cardamom powder
3/4 cup vegan buttermilk ( combine 1 tbsp white vinegar with 3/4 cup plant based milk)
1/3 cup flavorless vegetable/canola oil
2/3 cup (130g) Light brown sugar
1 tsp Rum flavoring (optional - this is for a rum flavored cake)
2 1/4 cups (350g) mixed dried and candied fruit - (I used 1/2 cup dark raisins, 1/4 cup golden raisins, 1/2 cup dried cranberries, 1/4 cup candied citrus peel, 1/2 cup candied cherries, 1/4 cup chopped pitted dates)
2/3 cup Orange juice (for macerating the mixed fruit)
