Curious about the approximate amount of wheat berries in grams? -> 4 1/2 cups FLOUR = 3 cups WHEAT BERRIES = 580 grams WHEAT BERRIES I halved the recipe and made batter for 12 cupcakes, so 2 1/4 cups of FLOUR and 1 1/2 cups of WHEAT BERRIES. I weighted the wheat berries and it was 290 grams. 1 cup was 194 grams. (I made a cake with the batter and it's deliciously hearty!! 😁)

So ur saying if I weigh my berries instead of measuring them, 1 cup is roughly 200g? Why do ppl weigh them instead of simply scooping out a cup? U have to scoop them out to weigh them, why not skip a step?

I have made these wonderful muffins a couple of times. Plain, strawberry, chocolate chip. BUT my favorite so far is Pineapple!!! Used pineapple I had canned. Then took a little juice with bits of pineapple and made a powdered sugar glaze. It was wonderful!!!!

EGG MATH. Modern recipes basically assume you are using large eggs and that each egg measures 1/4 cup of liquid. Use this basic formula to substitute the variety or size of the eggs you have to make a given recipe.

Incredibly enough, I have YET to make chocolate chip muffins! What is wrong with me?? I think it's because I know I'll eat them all lol I'm so thrilled you have started this journey! If you ever have a chance to hear Sue Becker speak in person, do. She's a wonderful lady and an excellent speaker.

I love chocolate chip muffins. It’s a favorite in my house. I got a all American mini muffin pan and it is a major favorite in my household. I double the batch and then add cocoa to the last little bit so I have a double chocolate chip batch. I also loves Sue Becker and have listen to everything I can get my hands on from her.

Oh I also do a batch of blueberry first. Then I do a batch and add chocolate chips to the muffin tin then I do a double chocolate chip batch. That pretty much keeps my family in muffins for about a week or less. :-) I have a tendency to give muffins away when I have been freshly made. I try to do three variety so everyone has something they like

Yummy recipe. I just tried it with home ground spelt flour but I didn’t have buttermilk so I added a heaping quarter cup of Greek yogurt to my one cup measuring cup and added milk to it. Since I’ve never had them done with buttermilk I cannot compare them but they were delicious. I had to use up some cranberries so I also added them for my fruit with powdered orange peel cinnamon nutmeg and cloves. Yum Yum Yum. Thanks so much for another great recipe ❤️🙏❤️

Have you every tried using either freeze dried fruit or making them plain and using jellies to add fruit? Freeze dried and jellied are my preferred preservation methods for most fruit, especially berries.

Oh my. I just made pumpkin muffins (double batch as well for my large family; 15 oz can of pumpkin, 2 cups kefir, I upped the sugar a bit as my kefir was quite sour, so about 3/4c dark brown sugar and 1/2c white, a TBSP of pumpkin pie spice and half that of cinnamon). So amazingly delicious!!! I do have a question though. When I was younger I loved bran muffins but they were heavy, dense, and almost chewy... Any ideas on how to replicate that?

Sure, just don't take out the bran and then add it back in. Use whole wheat to begin with. These muffins ARE bran muffins, because they still have the bran in. And they are deliciously fluffy.

You can put them in a ziplock after they've cooled down, or a cloth bread bag.

@@GrainsandGrit I hurt to buy it and I went to breadbeckers to get it. I decided that I would support the company that had my values. So far I failed badly at bread with it but that was my fault. I grabbed the soft white wheat by mistake. Then I made oatmeal raisin cookies that was a major success. Totally different than the kitchen aid that now makes noise making cookies. She now sits on the counter looking pretty and does easy jobs

Hi , I’ve made your muffin recipe several times now, with bananas it was so moist. So I decided to use my frozen fresh berries. The problem I’m having is they are not very moist so on my third batch of blueberries muffin I substituted applesauce for the oil! The taste is wonderful but still the moisture is not good!! What can I try any suggestions? Im using hard white wheat! Thanks

If you are using store-bought flour that could be the problem as much of the natural oil has been removed. It could also have to do with where you live. I would keep the oil PLUS add some applesauce. Just an idea!

If you don’t use honey, and use a sugar or sucanat/honey granules, is it also 1 c. like the honey? Thanks!! I’m a newbie, and already we’re feeling the healthful nutrients effects! This will be my 6th bake of fresh milled. My husband just bought me a Zojarushi to help save some time on busy days. Will attempt that next with your videos. Thank you!!

I made a single batch of blueberry muffin this morning. They tasted good but a couple of muffins still had raw dough. I used frozen blue berries, honey instead of sugar, and buttermilk instead of milk. I cooked them an extra 4-6 min but still had a couple raw spots. Please help! Any advice would be great.

Uh-oh. Try following the recipe with no substitutions. Of course, it may come down to bake time - every oven is different.

I’m pretty new to milled flour, and live in SE Texas, very humid. My muffins always rise, then flatten out on top. Won’t stay rounded. & my bread in zohjurishi always falls somewhat in middle. I’m following bread Beckers recipes so closely… any ideas I can try to help? Thank you!

The amount of flour varies day by day. You may find you need more flour on some days and not others. You may need to adjust the settings on your Zohjhrishi machine too.

I made for the first time pancakes with the Soft White Wheat. I ground the wheat berries in a Vitamixer. But the pancakes were tasty but grainy. Very surprisingly my husband and daughter did not mind because they tasted good but I did. How fine of a flour should it be for pancakes and muffins?

Yeah, they should be a regular fine flour like with bread. But unfortunately, the Vitamix can be tricky. You've got to mill very small amounts at a time and maybe even pulse it a bit.

I am going to do the same starting with 1/4 cup poured through the lid tell it stays on the side of Vitamix and keep on adding a fourth at a time until I use the 3 cups of grain thank you so much

These muffins look so good! How much is considered a serving on these muffins? And on the bread when using freshly milled flour is one slice a serving? Can you eat too much? 😁 Your Simple Yeast bread is so much better than store bought bread. I almost never ate bread because I didn’t care for it? But now I could eat this great fresh bread at every meal.

Well the beauty of using freshly milled wheat is your body will definitely tell you when it's had enough. Because of the fiber and how much it fills you, you're not able to eat ALL the muffins at once or all the bread at once. For breakfast, one slice of bread as toast is plenty for me! As far as servings go, I would say 1 slice of bread is a serving and 1 muffin is a serving. But I don't worry about it :-)

my muffins came out dense and inflated. Not sure why, any advice? I milled freshly wheat berries and thought they would be puffy like a muffin and not flat and dense. very disappointed that I just can't get the hang of milling my own grain :(

Do you ever sift the brain out of your flour before baking? I'm tempted to get the flour sifter for my Bosch to make my baked goods lighter when using whole grains. Would love to know your thoughts.

Great question! If you've seen my biscuit recipe video, I actually do sift my wheat to get a lighter biscuit. Even with sifting, you are NOT going to remove the entire bran and germ to make true white flour like you get in the store. You need industrial machines to do that. I would say I sift out maybe 10-20% of bran - if that. Sifting at home still gets you a whole grain bread with all the nutrients (like Vitamin E, good fiber, etc.), just a little less bran and germ to get a lighter flour. If you have ever come across old recipes, they say to sift the flour because way long ago they used to have whole grain flour. I'm not sure how intense the Bosch flour sifter is, I just use a regular old-fashioned sifter I got from a yard sale for $0.25 many years ago lol

Quick question: I bought a Nutrimill grain mill to grind wheat berries. It says to grind 2 cups of wheat berries to clean out the machine. Is there anything else I can use (dried beans, rolled oats, etc, so I don’t have to waste 2 cups of berries? I’m new to milling and hate the waste. Thx.

I've made them a few times now and my kids love them although they are messy. Do you have a problem with the muffins being too crumbly?

They can crumble easier after a couple of days, but when they’re fresh mine don’t crumble. If they’re crumbling fresh out of the oven, you may be cooking them a little too much? Also do know that my favorite wheat to use now is einkorn. It makes the muffins very squishy! You can try switching to einkorn and see how that works. Do know that when using einkorn, the batter will be VERY liquidy. Don’t freak out lol

What kind of oil do you use. Is there something besides canola oil or vegetable oil that I can use ? I don't like to use those. EV Olive oil will effect the taste so I don't know what else to use. Do you have any suggestions?

Yes peanut oil and olive oil are my go to oils 😄 with recipes like this I use peanut oil. For my bread, olive oil is just fine.

Sunflower, if you can find it. Grapeseed, or melted coconut oil. Or my favorite, plain ol melted butter for muffins.

@@GrainsandGrit not sure what you mean. I'm wondering if I can make muffin mixes, or pancake mixes with freshly milled flour. Would it cause the flour to break down or go bad? I have a large family- will be 12 in Jan- so nothing lasts long on a shelf. I'd like to have mix for a week or two as meal prepping. So I can just measure out dry and mix with wet for muffins or pancakes etc. I'm not planning to store for long term or anything like that.

@@GrainsandGrit Pretty new to milling. Only been at it a couple of months. I've only milled as needed so far- but miss the convenience of mixes. Also- by mixes I don't mean Bisquick, or just add water pancake mix and muffin pouches- I never buy those, just homemade mixes. I was just using Bisquick as an example of what I meant.

How much berries to start with that then are ground into flour? 3 cups as someone else said below? I don’t want measure out the flour after grinding. Just tell me how many cups to grind. I also soak my flour in acidulated water before making the baked goods. I’m surprised neither this baker nor the BreadBeckers do this.

Definitely not. My main loaf bread recipe is my own. Chocolate chip cookies is my own converted recipe as well as my biscuits! Can't remember what else I have on here :-)
