Hello everyone,This is Paaru. Today I am happy to share with you a tasty recipe that is perfect for Poori/Puri, Naan, Chapati, Roti, Indian Breads, Tortilla's,Mini Naan dipper's.So let's get started.
Ingredients:
• 4 potatoes
• 1 cup green peas
• 1 cup Mixed veggies (Carrot, Beans, Corn)
• 1 teaspoon chopped ginger.
• 1 teaspoon chopped garlic.
• 4 green chilies
• 1/4 teaspoon cumin seeds
• 1/4 teaspoon mustard seeds
• 1/2 teaspoon chana dal
• 1 dry red chili
• 1 teaspoon curry leaves
• 2 teaspoons oil
• 2 medium onions
• 1/2 teaspoon grated Ginger & Garlic
• 3 teaspoons besan (gram flour)
• 1/2 teaspoon Kashmiri chili powder
• 1/4 teaspoon turmeric powder
• 1/4 teaspoon cumin powder
• 1/4 teaspoon coriander powder
• 1/4 teaspoon garam masala
• Salt to taste
• Water as required.
• Coriander leaves for garnish
Instructions:
1. Heat 2 teaspoons of oil in a pan. For the tempering, add 1/4 teaspoon each of mustard seeds and cumin seeds, 1 dry red chili, 1/2 teaspoon of chana dal, 1 teaspoon of curry leaves, and 4 green chilies.
2. Next, add 1 cup of chopped onions and 1/2 teaspoon of minced garlic and ginger. Sauté until the onions become soft.
3. Then, add potato pieces, mixed vegetables such as carrots, beans, and corn (1 cup), and green peas (1 cup). Sauté for 5 minutes. Cover the pan and cook for another 5 minutes on medium heat.
4. Afterward, remove the lid and continue cooking over medium heat. Add 1/4 teaspoon of turmeric powder, 1/2 teaspoon of Kashmiri chili powder, 1/4 teaspoon of garam masala powder, and 1/4 teaspoon of cumin powder. Optionally, add coriander powder. Season with salt to taste.
5. Pour in 250 ml of water and mix well. Cover the pan and cook until the veggies become soft.
6. In a separate bowl, mix 3 teaspoons of besan (gram flour) with 75 ml of water until smooth.
7. Once the vegetables are cooked, add the besan mixture to the pan. Cook for another 5 minutes on medium heat until the curry thickens.
8. Your delicious Aloo Mutter curry is now ready to be served. Enjoy it with Puris/Poori, Chapatis, Rotis, Naan, Dosas and Idlis.
