Agree, you can adjust as per your preference. As I mentioned in the video, it can be totally skipped if on diet. But if you have tasted the famous mumbai pav bhaji it has lots of butter, it gives a good flavour.
The butter is used in 3 different steps but the quantity of total butter is 4 Tbsp, which we generally use in one go when we make the pav bhaji in the traditional way (saute the onion tomatoes) You can cut down the butter as per your preference.
As I mentioned in the video, Please skip if you don't want. Actually I have tried to make it taste similar to Mumbai pav bhaji which has lots and lots of butter, But I have substituted potatoes with green moong and food colour with beetroot and have tried to put lesser butter as compared to market ones where they add refined oil also. Here in Mumbai the pav bhaji is loaded with butter which is its USP :)
As I mentioned in the video you can skip the butter. But it is not too much because we generally use butter and oil for sauting the onion and tomatoes, which we are not using.
