Rabbit used to be a very common meat, and rabbit pie is one of the best things you can do with it. But these days, if you're not a hunter, it can be quite difficult to get hold of a rabbit. I actually had to phone 7 different butcher's shops to find one that had a rabbit, and it wasn't cheap. In this video I show you how to butcher a whole rabbit.
I was inspired to make this after watching a short 1932 film on the subject. As well as adding bacon to make the meat go further, the cook also added some hard-boiled eggs. This pie only had pastry on the top, and after cooking, a jellied stock was added and the pie was eaten cold. It was actually a bit of a mess. I decided to make 2 pies - one as per the film but without the stock added at the end. And the other, a true pie with pastry top and bottom, no boiled eggs, and jelly stock added.

This reminds me of the time I lived in London when Watership Down came out on the cinema. The local butcher had the front window with hanging rabbits, a stack of books and the movie poster with a sign that said, "You read the book, you saw the movie, now eat the cast!" I still crack up whenever I see rabbit.

Hi from the south west of Ireland..we have so many rabbits running about here it's hard not to mow one down..so rabbit stew, pie and casserole is always on the menu ..definitely going to give your recipes a shot Thanks for sharing ...

Definitely a thumbs-up for this video. I could just almost taste that delicious looking pie in 'full living-color' HD. I don't know why cold meat pies aren't more popular--especially the jelly filled ones. Cheers.

I realize that I’m a couple of weeks behind on this, but the timing could not have been better for me to see this video. Just yesterday, my not so wicked stepmother, who’s currently celebrating her recent retirement by visiting a friend in London, posted a nearly pornographic pic of a case full of pies with standing crusts at Fortnum & Mason. I don’t know why America hasn’t embraced this glorious tradition. Pretty much the only place where I can reliably find some version of this is Trader Joe’s, where they do frozen beef & ale and chicken balti pies.

Interesting recipe that. I think you're right though, the one with the jelly and cold would be better. Nice with some mustard and cheeses.

Both my grandmothers made rabbit pie. My mother also makes it from time to time. Although I like rabbit, I always seemed to end up biting down on a bone or a piece of shot, which spoiled the experience. My dad says rabbits fell out of favor because of myxomatosis, a virus that kills rabbits. He says the government introduced it into the UK to control the rabbit population in the 1950s and for many years people avoided eating rabbits. I remember as late as the mid 80s, my dad was still finding rabbits with the virus.

Thank you for wearing the Red Poppy in honour of Remembrance Day, commemorating those who died in the line of duty. THANK YOU, VETERANS !!! During the Second World War, rabbit wasn't rationed, so people could eat as much rabbit as they could get (which is why so many people kept rabbits during the war).

Ollies in her god, haha! Didn't look like they deboned it - would have been a tricksy thing to eat, picking all those bones out.

What are the odds? I just watched that film yesterday! P.S. I think it would be easier to add the jelly stock to the pie when its fresh out the oven rather than cool, before the juices in the pie have had time to congeal.

The food looks good but any type of game meat or offal I just can’t eat because I do not like the taste or smell. I do cook liver and onion gravy for hubby as he likes that meal but he would love to have stuffed lamb’s heart. So Keef add that dish to your requests. kindest regards

I have a game shop near me in Halifax, It's called Marsh Top Farm Shop 259 Shay Ln, Halifax Hx2 9AG, they sell all game meat :-) and the pies look moreish Keef, I would love for you to do a rabbit stew, I used to love it when I was growing up :-) and as always great vid Keef,

NO, actually for putting jelly into pork pies. But I have been known to pump chickens full of tasty stuff.

I'm slowly making my way through your videos & there are some stonking recipes especially this rabbit & bacon pie, Rabbit was always on the menu back in the late 1950's early 1960's It was the only meat we ate back then everything else was offal. Dads joke was always pick the rabbit with the hunch back it'll keep the crust up in the pot😅 I see you use a pressure cooker regular I was wondering what your thoughts are about those new smaller microwave pressure cookers? With the price of energy these days I was thinking about getting one.

Microwave pressure cookers? Not heard of that. Do you mean the Instant Pot things? Electronic but not microwave. I might be interested if I didn't already have a kitchen full of gadgets!

@@Keefcooks No they apparently have a vented cap & clamps on them, They're just big enough to fit into a microwave & are made of tough heat resistant plastic, They seem to get really good reviews on line. Not expensive at all so just ordered one off the bay a 2.8ltr one, Just making a down under pie floater for tea tonight off one of your videos.😀👍

Just had a look on Amazon - £10-£20 and they look like they'd do a great job for the kind of things I use my regular pressure cooker for. And using the microwave saves on energy cost. Maybe I'll ask Santa!

I never knew how it was made but love corned beef, corned beef hash is a regular on the menu here. Horrible rainy day here so feet up & watch some more of your vids with a cuppa.

@neil turner The point of this video was to follow an old recipe that used the rabbit raw. Good tip about the knife though, hadn't thought of that.

Keef, you're a star. I may have to try that. My Mam likes me to make rabbit pie, but I do it as a plate pie with a stewed rabbit and beef shin filling, as she always did. Not sure about the boiled eggs mind. Keep up the good work. How about a savoury duck recipe - ie, penny duck or faggot - no actual duck.

I found that fascinating and will check out the original also. I make plenty of rabbit pies as i shoot them in the orchard, another twist for me to use. Nice one Keef.

Rather the Bugsie was precooked with some bacon, onion, carrots, thyme and a touch of garlic and it has to have a bottom! Interestingly since the introduction of the Rabbit Calicivirus in 1995 (it killed 10 million rabbits in the first 8 weeks), rabbits are almost impossible to find here in Australia. The virus attacks farmed rabbits and pet rabbits as well, so finding any sort of rabbit is like winning the lottery.

I am one of the hate it brigade who discard the jelly in Pork Pies so I think I would like the Hot one but like you I think Pies should have a bottom and a top. I have only ever cooked Rabbit on the bone and with lots of sage but it is good meat although I have found it a bit expensive unless you have a good outlet.

Young whippersnappers likw you and Mrs Keef probably don't remember pre industrial chicken, which was an expensive luxury meat. In addition, the country was overun with rabbot because they were basically breeding like rabbits to an extent that they were causing great economic damage to farm crops. Some bright spark decided to "solve: this problem by inoculatimg a few rabbits with a disease called ixamytosis (spelling?) whikch spread like a plague and very nearly wiped out the rabbit population. I was a very ypung wippersnapper at the time, and believe you me, if you ever saw dtimg or dead rabbits from this disease. it would (was) a very long time before you would even comsider eating rabbit.

Paul Ashton I often cook from old recipes, and I've noticed that old cookbooks all have recipes for "mock chicken" that use veal or rabbit instead. It's surprising to me because in my lifetime, chicken has always been the cheapest meat available. I wonder why it used to be expensive and what made it become cheap.

I remember having rabbit quite often, usually with dumplings. I also remember when that terrible disease was introduced into Britain. It was nasty .The poor things died as you can imagine. I have only had rabbit once since then.
