This video ended up way too long, if you watch any of it check out SP Irisu at 2:29:07, she's by far the hardest boss in this. Rabi-Ribi is one of my favorite games, a metroidvania where you really can go pretty much anywhere after the prologue and make your own nonlinear path through all the bosses. Impossible difficulty is an unused difficulty from the artbook DLC, that increases damage from enemies throughout the world and makes boss patterns much more dense, but also lets you buy additional healing food from the shop. Once you get out of the prologue, the extra food actually makes most of the bosses feel comparably hard to Bunny Extinction difficulty, but funnily enough that makes the last boss before access to the shop, Ashuri 1, one of the hardest bosses of the run. After that, the next bosses that gave me any trouble were in the endgame and postgame, in particular normal Irisu was pretty hard then SP Irisu was the hardest boss on this difficulty taking over 10 hours for me to beat her. I thought it was overall a fun challenge, but a lot of the added difficulty was concentrated in the hardest bosses and in just world traversal, in particular the late game gauntlet preceding Rumi and then parts of the DLC chapters like the escape after the Fairies and the entirety of chapter 10.
I mostly played on Alternative for level scaling, but switched to Standard for some of the last bosses. You can tell I'm trying to manipulate SP Irisu's level by only equipping badges once the fight has started, but I'm pretty sure I messed it up and played with alternative instead of standard, her level is a lot higher than it should be with successful manipulation. I picked "Mildly intense!" and left side for all the optional endgame difficulty selections, Impossible is already hard enough for me without going for the extra hard versions of those bosses. I'd normally fight Cocoa 2019 but she apparently crashes consistently on Impossible so I just fought normal SP Cocoa instead, which only crashes during one attack.
I wasn't sure what order to put these in, so mostly just put them in order that I fought them, but I moved all the open world bosses that you could fight anytime before the end bosses that start with Miru, and put all the optional SP bosses at the end. I also decided that it only counts as a boss if you get a named health bar at some point during the fight, so left out various one-time miniboss encounters that don't actually have a name. Noah has a cut after the first phase, as there's a checkpoint there and I died, but I did get Erina in one sitting even though that fight also has checkpoints.
