Weber Kettle and a beautiful Rack of Pork. Cooked perfectly with the Slow ’N Sear!
• Started with a 5 lb Rack of Pork from Costco.
• Brined the pork for 24 hours with apple juice leftover from our applesauce making, and salt. Rinsed it off and blotted it dry before seasoning.
• Seasoned with Pork Barrel seasoning from Costco
• Put the Slow ‘N Sear in the Weber Kettle for this cook.
• Brought the grill up to 400 degrees to start the cook.
• Placed the Rack of Pork on the indirect side. I was shooting for internal temperature of 145 degrees before pulling off the grill.
• Once we hit around 100 degrees, we turned it for a more even cook.
• Pulled the Rack of Pork and covered for about 20 minutes before cutting.
Summary: The Rack of Pork turned out amazingly tender and juicy. The temperature of the grill
slowly dropped from 400 degrees to 300 by the time the internal temperature was
reached. I would do this exactly the same way when cooking again.
