Why is it that with the faux tenons and ebony plugs you don't want to bottom out?

Hi Karl, If I set the faux tenons and ebony plugs to bottom out it doesn't leave me with any adjustment. In other words if the plugs bottom out - the length of the faux tenon and the depth of the mortise need to be exact to achieve the desired amount of protrusion. By making the mortises deeper I can tap the piece in and stop exactly where I want it.
