My bro in law is Ilokano and he makes the bestest Igado! He makes it with hearts, lung, liver and kidneys. 😋😋 It's a very rainy day here in Chicago too and I would ❤to have some filipino comfort food

Igado (or higado) is a Filipino pork dish originating from the Ilocos Region in the Philippines.[1][2] Its name means "liver" in Spanish for which it features, although it may include other pork meats and offal also.[3][4] My fave❤

Yes, indeed! I found out about it from family friends here in the states! It is a spicy Ilocano dish which you can adapt with the use regular meat rather than organ meats.....which is unfortunately common with Asian / Oriental dishes & being blamed for 'gout' among regular consumer! I'm not trying to scare you off...tasting is fine but regular consumption is not! You might want to ask your family doctor about it! I'm sharing this with you based on knowledge & experience in dealing with folks not even Filipinos with high 'uric acid count'! It is my 'concern' of you & anybody else who would listen! We love you for doing this & for bringing to light the 'Filipino' experience! Stay safe always & Godspeed!

thats what you get when someone from one region serves food from the other region...they dont dont understand whats in the food. anyway Igado or (EE-goddo) is an ilocano dish. but its basically the cousin of the more famous Menudo. they have basically the same ingredients. Menudo however has tomato sauce in it. while other uses bagoong. the bicolano version of igado has coconut milk and spicy. the Bopis however is made of lungs, heart and liver of either beef or pork. saka hindi sabaw yan, its more of a sauce or sarsa sabaw is either a soup or a stock, sabaw is free among carenderias. sarsa or sauce are thick and sometimes creamy depending on the dish. examples "sabaw" dishes are sinigang, nilaga, tinola etc. while sauced dishes are caldereta, kare-kare, adobo, etc...

Igado = Ilocano specialty. Kilayin = Pampanga. My absolute fav is Igado until my Kapampangan nephew in-law made Kilayin with paputok (literally "the bomb"). Paputok is a seasoned deep-fried liver until crispy, tinadtad, then put on top of the Kilayin. Igado or Kilayin with paputok? I will have both please 😋

Yeah, I'm Filipino. I noticed that some people are too shy to correct. The tindera should have at least spelled out the name of the dish. Because clearly, Kurt didn't get the name right. It's "Igado" not "Egado". He said it many times and nobody corrected him.
