Ramp leaf garum is the method I came up with for making a vegan fish sauce substitute. To make it, you'll need a juicer, goggles, gloves, koji rice, and a large box-style dehydrator. This is one of the coolest things I've ever made from ramp leaves. It's take a little effort, but most if it is unattended.
