Today, I made a dish that I randomly thought of, amatriciana rice! I made a clay pot rice made with same ingredients with Amatriciana pasta.
It was delicious but it was slightly too rich. It needed stronger acid component to balance out the richness.
Also, unlike what I was hoping for, the dish itself didn't really remind me of Amatriciana at all. It's awesome that I have an idea to improve this dish further for future. Overall this made me so happy since my favorite part of cooking is turning a conceptualized idea into reality!
