- 120 g white chocolate
- 100g whipped cream (hot)
- 4g gelatin granules
- 2 tablespoons water
- 140g whipped cream (from the refrigerator)
RASPBERRY CREAM (MOUSSE)
-180g fresh or frozen raspberries
- 90g sugar
- 4g gelatin granules
- 2 tablespoons water
- 160g whipped cream (from the refrigerator)
GLAZING (GANACHE)
- 170g dark or milk chocolate
- 140g whipped cream (from the refrigerator)
DECORATION
- freeze-dried raspberries
