रव्याची कुरडई
Semolina: 1/2 cup
Water : for soaking and cleaning
Oil : 1 tsp
Salt : 1/2 tsp or as per taste
Water for cooking
Steps:
1. Clean semolina, and add 2 cups of water , cover the bowl and let it soak for 12 hrs
2. After 12 hrs remove the water and add fresh water in it and again cover it and let it soak for another 12 hrs
3. One more day for changing and soaking , and after soaking semolina for 3 days drain the water and grind soaked semolina in a grinder by adding little water
4. Remove it in a bowl and add more water and mix it well , close it and keep it aside for 12 hours
5. Next day carefully drain its water and add clean water , mix it well , close it and keep it aside for 12 hours
6. Next day again drain water carefully and you will get thick cheek at the bottom of the bowl,
7. Mix it well and measure it in a bowl .. mark the measurement and use that much amount of water for cooking the cheek
8. Add oil in a pan , when oil is hot add measured water , salt and let it boil , once it start to boil , pour cheek in it slowly and keep mixing it using a wooden spoon or stick , when the mixture is thick , apply little cold water on the cheek and turn the flame low, close the lid and let it cook for 2 min
9. After 2 min , the cheek is ready , turn off the flame and mix cheek well.
10. Add this cheek using a spoon in the kurdai maker , spread clean plastic sheet and start making kurdai on it.
11. Make all the kurdai and let them dry in sunlight for 3-4 days
12. After drying , store them for years
In the 1/2 cup of measurement I prepared 8-9 kurdai
You can increase quantity by following same procedure.
