We can multitask all the time, but at some point... Congratulations to your Eagle Scout and to you,Mom! Both of my sons made Eagle. Tell him to make sure he adds that to his his resumes. It took a while before I convinced mine and it surprised them when it helped.
I have been at that spot. We just stop, regroup, and start again. No matter what's going on. Feeling blessed that my brain turned on at the right minute . Praying your day just gets better. Seems there's a big lot on the plate, enjoy it.
I saw this video the other day when you first posted it. I agreed with the message right off. Today I am super busy but HAVE to get salmon and pork canned. I did the salmon this morning, no problem. Tonight after supper I am wiped out and really need to get the pork done. I jarred it up, put it in the canner, set my timer for 10 minutes to vent and then reset it for 70 minutes for the pints. OOPS! IT SHOULD BE 75 MINUTES! While I was waiting for the jiggler I decided to look at the book. Yup, screwed up! Even though I checked it this morning, I still almost blew it! I heard your voice in my head, "Read the instructions every time!" Yes M'am, thank you for for the reminder! It kept me from losing my pork or having to redo it when I am super short on time!
Definitely agree. I'm canning carrots today (so many carrots!). I got them washed, peeled, sliced, washed. Then read the instructions. I keep forgetting how long they need, so I've got the tab open on my computer. I'm also making dinner and cleaning up while the canner comes up to temp. Roast chicken with mushrooms, leek, and instant mash potatoes. (Yeah, I know they're awful, but there's just no way I'm making mashed potatoes from scratch today.)
Thanks for the "realness" of your life! Makes mine seem normal. Congrats to your granfson. Eagle scout is a hugh achievement. My GS has two years to go and has already started working on his project. Agree 100%. Been doing this a long time, but my memory is short. To add to your PSA - Read *CURRENT* instructions every time you can. I have Ball Canning books that date back to 1957. (That one belonged to my mother.) Amazing how much they've changed as more testing has been done. Still remember well, the big changes that were made in the 1990's. Many food preservation books published revised editions because of the need to update their canning sections.
Canned "ugly chicken" last September thanks to your videos for the first time. Today, I opened one of the jars to make a meal (first time I've tried to open one) and it was perfection! Flaky, delicious and amazing! Thank you so much for all the great info! Looking forward to doing more canning!
Thanks for reminding us! Recipes, processing, exchanges...check and recheck. I started using a highlighter on my books for jar size, times, WB & PC. Yes, I am one of those who gets a step ahead of myself.😪

I had to look up every item bcuz I was doing too many items. My brain said, "OVER LOAD!" I started with the green beans, then mushrooms, then pork loin, then beef steak, then asparagus. I finishished at about 2:30 a.m. It's been a really long day. And of course, like usual, I can't go to sleep. It's 4:46 a.m. and I'm reading your post on mushrooms, LOL.
Thank God that little voice said to check the time! Saved you so much headache. My husband,daughter and I were invited to an Eagle Scout ceremony many years ago. I cried the whole time. It was beautiful,take tissues! Congratulations
@SuttonsDaze Leisa, have you ever heard of a person who had nausea or heart burn after eating properly canned pork or chicken? My wife is the only one of the 6 of us that seems to find canned meat disagreeing with her and I don't know why. Thanks!
Nope, I would wager that it's how it's prepared. Meaning acidic dishes. If she doesn't get it with fresh cooked, it's highly unlikely that the canned protein would do it.
