Chicken Taco Stew -
3-4 pounds boneless/skinless chicken breasts or thighs
2 cans black beans
1 can corn
1 can chicken broth
1 can diced tomatoes
1 can tomato sauce
1 small onion finely chopped
1 cup salsa
Cayenne pepper to taste (I use less than 1/2 tsp)
1 tsp salt
1/4 teaspoon black pepper
I add cilantro before serving!
Cook high 4-5 hours in crock pot. I will try 20 - 30 minutes in the pressure cooker!

My Dad had 32 aunts and uncles. Both of his parents were 1 of 18. They were the youngest of their 17 siblings. My Dad has 167 first cousins. You guys are creating a legacy that used to be common place. Do the older kids ever sit down and think about the possibility of how many nieces and nephews they could have? Or how many grandchildren you could possibly have? How fun!

I’ve been watching your channel for 2 or 3 years now and I’m amazed of everything you’re all doing as a big family. You are the reason that I’m watching RU-vid😂. I love the commitment you put in every projects for more simple or complicated that they are. I’m a single mother of 2, a boy 22 years old and a girl 11. When my kids were little I canned beef, chicken, rabbit, and as many vegetables as I could get my hands on. It wasn't unusual to have over 500 quarts at the seasons end. When I looked at it all it gave me such gratification. Now I only do tomatoes, potatoes and winter squash. I have never done dried beans but watching you has dried beans on my grocery list and I'm going to try them. My family is grown and out on their own and my husband has passed but watching you and your family brings back so many memories. For that I thank you. God Bless.

Iv been watching your videos for years, and swore once I had kids I’d do all the things you do. Just had my first baby 4 weeks ago, and I now have so much appreciation for the superwoman you are cause I feel like I haven’t gotten anything done 😂

The first like 3 months are basically just survival mode. If you are both still alive at the end of the day, count it as a win!! Give yourself grace and soak up all the baby snuggles while you can!!

Agree with the survival mode. Our life was turned upside down with our first kid - on more than one day we felt like it would finally be time to have breakfast... at 4pm. No feeling for time whatsoever. It passed eventually,.

May I suggest you keep a notebook of what foods you can AND where you’re storing the food, along with a list of the foods you’re storing posted on the inside of the cabinet door where you store the food…I also can foods, I live in a small apartment and have to be creative in finding places to store the foods. If I didn’t make these lists I would be at a loss to know where I’m storing my food… so happy to see you canning, what a blessing for your tribe… God bless you…❤️

When you stack your canned goods, please put a piece of cardboard between the bottom and next row. It lessens the direct weight on the jars below. Please don’t stack more than one high. Your beans look awesome! Dehydrate some Roma tomatoes,grind into powder when done….great to use in so many soups and dishes! Dehydrate yellow squash, cut like potato chips, and zucchini. Great for snacks. Slice apples….slice bananas…..great snacks that are dehydrated. Enjoy, Love, Bev in Maine.

Congrats on your canning success. Helpful hint with the ground beef that I learned just as you are about to. If you can it in broth, it just dumps out. When you can it without broth, which is what I do, it’s a little harder to get out of a regular mouth jar. Much much easier with a wide mouth jar. Another thing with hamburger that I never thought of until I saw a RU-vidr do. Meatballs! I hate rolling them. But if you just suck it up and do a lot at one time it’s easier. Roll them, bake for about 10 minutes….don’t want to try to can a glob of raw hamburger cause won’t work…put in jars with a liquid, water, broth, sauce. Real quick meatball hoagies or any other dish. You can’t can grains. Can only use spices and herbs…or veggies…as a filler in the meatballs. If you stack your jars, you can lose the seal on the bottom ones. Put a piece of cardboard in between them. I bet that soup you made would be good canned! Try canning chunks of beef…like roast. It is so good! Good luck! Have fun!

I love that you're learning to can! My mom was Amish so canning was passed down as easily as learning to wash the dishes well! Did you know that you can use your pressure canner to steam can instead of having an extra solely waterbath canner? Just let it vent for ten minutes like you would for pressure canning, then start your timer for waterbath times. Makes it so easy!

what I love about canning the beans is you can use the liquid in the dish because you know exactly what went in the jars. It is so nice when you run out of something you don't have to go to a store you just "shop" your store room. You do a phenomenal job I have no idea how you can do all that you do and have a new baby. I cut back on tomato plants this year and froze tomatoes as they ripened on the vine. Saw a youtuber who cans her tomatoes with no spices but salt. Instead of trying to find a recipe that goes with spicy italian tomatoes she adds the spices that are needed when cooking the dish. I thought this was brilliant.

Yes. I am freezing tomatoes and will take them out to can salsa. A friend said to cut the things out and cut in half and when they defrost the skins come right off. Then it’d easier to chop and make.

@@midlifemama8420 You don't even need to cut them in half as they thaw the skins fall right off. What I have done is wash them, let them dry then as I am putting them in bags I cut the stem end out just by running a small knife in a circle around the stem as this takes most of the hard core out. When they thaw it is harder to remove that part because the tomato really doesn't hold it's shape. I found putting frozen tomatoes in my crock pot on low helps to thaw them faster (just pull thawed tomatoes from the bottom) remove skins and toss tomato in your sauce pot.

You're doing a great job with canning! Waterbath canning is similar but you cover your jars with water. If you don't have a waterbath canner you can use a huge soup pot that has a lid and put a pressure canning rack on the bottom so the jars don't break. You are being very productive in your stage of life with little people. God bless you all.

I found that my cabinets had more space than I thought on the lower ones for my jar’s of canned goods with organization. And in closets at the bottom in the cases for the jar’s and so on. Anywhere you can find for the boxes to fit but not in the garage because you do not want them in the heat. Even in the basement on some shelves you build with wood and big wall bricks.

Way to go busy momma! Something I've learned over the years is to make large quality and either freeze or can leftovers. Last two years when I make soups I make in large roaster oven. Have a meal for now and several for the future. One mess and home cooked meals with no mess later. Like I've said before, canning is addictive, healthier, and cheaper after the initial start up. Water canning is going to be a breeze for you. So much faster production! If your family love salsas and relishes there are some amazing recipes for them on pinterest. I usually do triple batches because I share my canning with friends and family.

Be careful stacking your canning jars. The weight of the one on top can break the seal of the one it's on top of. It can also provide enough weight that if there's any fluctuation in temp it can seal it back and you would never know the seal was broke, but the bacteria already wormed it's way in. I love that you starting your home canning venture... you will soon have a pantry full of home canned food... I have been canning for years and last year I bought a Nesco smart canner, it only does small batches, but I think you will love pressure canning in it and be comfortable doing it.. it is kind of like using an instant pot, but for canning.. I also bought a ball fresh tech waterbath canner... I absolutely love that also... you can do large batch canning it that... things I love about both canners mentioned... both a very easy to use, both are electric so it frees up your stove.. I would check into both canners watch a few videos on them do your research... but I can tell you, I don't know how I lived without either canner all these years...

You can always rehydrate the kale and put them in a recipe! I remember my grandma always dehydrating zucchini, carrots, and basically anything from the garden and she would rehydrate them in soups and stuff. As always, you have amazing children and you’re doing great mama!

I have the same Dehydrator. I dehydrate slaw mix. I also dehydrate kale and spinach. Grind them in a blender to a powder and add to soups, pasta sauce or just about anything Great way to add vegetables in your diet.

I love watching your channel! It reminds me of when my children were home! I only had three boys but the first were twins and the third only 2 years later but I remember the crazy days and how much I love that time now that they are grown with families of their own. Also be aware if you run short of vegetables to can, many larger farms , near the end of the harvesting, have "you pick" time for vegetables. I have picked tomatoes, green beans and corn to can/preserve. If you pick yourself, the cost is discounted. Make sure to take some boxes, bins, etc to bring vegetables home. Also, it is possible to can chicken, pork, spaghetti sauce, and soup base. The possibilities are endless. Way to go on learning new skills. I am of the same mindset, always like to be learning and trying new experiences. Love watching the older kids cooking and experimenting with their own spin on recipes.

Amazon has rechargeable desiccant packets for moisture absorption. Put them in the jar with the kale chips. They will change from orange to green according to the moisture level in the jar. Great idea to can cooked ground beef.

Keep your home canned foods in a cool, dark place.. Canned chicken is great as well.. it makes wonderful chicken salad when you're in a hurry.. The Amish canning book has some great soup recipes for canning.

Yes! I grew up on canned beef cubes. Thicken the juices and you’ve got beef and gravy. So tender! You can do the same thing with pork loin too

I pressure can my spaghetti sauce with the meat in it. All you have to do is boil some noodles maybe do a salad. you can do taco meat or salsa. Soups are awesome for ready to go meals.

I use pastaplates, minced meat coocked in a bit of tomatosauce, ( dairyfree, I only use oatbased "milk") bechamelsauce I do from scratch (without any cheese in it) and dairyfree cheese ontop...so only one layer of "cheese" and I serve crunchy sallad and cucumber to it.

That's a kombucha kit! I know because I just bought one and have my first brew on top of my fridge! 😁 I don't mind the real life noise, my house is just as loud with half the kids, lol. Your canning is amazing! Things like this I think teach my kods that you are never too late to learn a new skill.

love that you are canning now. When you make your broths, put the liquid in the fridge over night. Then in am skim off the excess fat and reheat then can it up. Just a tip i have found that works best for me.

We've switched from water bath to steam canner, and I recommend that bcuz it uses less water/takes less time to heat before you add the jars

I also cook ground beef ahead when I catch it on sale and vacuum seal & freeze it. Having this precooked is a huge time saver.
