ಪಾಲಕ್ ಪನೀರ್ ಮಸಾಲಾ - Palak Paneer Masala
Ingredients:
• 1 bunch of spinach (palak)
• 200g paneer, cubed
• 3 large onions (1 finely chopped, 2 for blending)
• 2 tomatoes (for blending)
• 4 green chillies (for blending)
• 1 inch ginger (for blending)
• 8 cloves of garlic (for blending)
• 1 inch cinnamon (for blending)
• 2 cloves (for blending)
• 2 little coriander leaves (for blending)
• 3 tbsp curd
• 1 tsp red chilli powder
• 1/4 tsp turmeric powder
• 2 tsp coriander powder
• 3 tbsp oil
• 1 tsp butter
• Salt to taste
Instructions:
1. Cook the paneer: Heat 1 tablespoon of oil in a pan. Lightly fry the paneer cubes until golden brown. Remove and set aside.
2. Prepare the masala: In the same pan, add chopped onions, tomatoes, ginger, green chillies, cloves, cinnamon, spinach, and coriander leaves. Fry for about 5 minutes and then let it cool.
3. Blend the mixture: Once cooled, blend the mixture finely into a smooth paste.
4. Prepare the curd mixture: In a bowl, add 3 tablespoons of curd. Mix in red chilli powder, coriander powder, and turmeric powder.
5. Final cooking: In a pan, heat 2 tablespoons of oil and 1 teaspoon of butter. Add the chopped onions and fry until golden brown. Add the curd mixture and fry for 1 minute. Then, add the blended spinach mixture and salt to taste. Fry for 3-4 minutes, adding a little water if needed for the desired thickness.
6. Add paneer: Add the fried paneer to the mixture and cook for 5 minutes.
