Title: Asian Biscue Sauce and Egg Noodle
“Lobster broth”
2 700g lobster, 1L water
After boiling the water in the pot, boil the tail for 10 minutes, the large tongs for 4 minutes, and the small tongs for 2 minutes. Trim and spread the flesh.
“Isian Biscue Sauce”
Lobster skin, lobster boiled water 800ml, pepper oil 4Ts, red pepper powder 1Ts, soy sauce 1Ts, mirin 2Ts, red pepper paste 2Ts, soybean paste 1/2Ts, brown sugar 2Ts, carrots 1/10, onion 1/4, garlic 2, ginger 5g, 10 stalks of white chives
Put chili oil in a pan, add the lobster head and bake it golden.
Add the remaining lobster skin and stir-fry to bring out the flavor.
Add carrots for broth, onions, garlic, and ginger, and fry for 1 minute.
Add mirin and deglaze.
Add red pepper paste and miso and fry for 30 seconds.
Add the white onion, red pepper powder, and soy sauce, stir-fry lightly, and then add the lobster broth (boiled lobster water) and boil it to about 1/3.
When it is salty, add sugar, turn off the heat, and filter it finely to complete the biscuit.
“Egg Noodle”
Grapeseed Oil 2Ts, Asian Biscuit Sauce 100, Water 300ml, Egg Noodle 4ea, Fresh Cream 100, Carrot Vegetables 1/10, Onion Vegetables 1/4, Garlic Slices 5, Ginger Vegetables 1/2, Chopped Chives Green 5 stalks of portions, 4 egg noodles
Put grapeseed oil in a frying pan and fry in the order of garlic, ginger, carrots, and onions over medium heat. Remove them from the plate.
Put 300ml of water in the same frying pan and boil the egg noodles for 2 minutes.
Add biscuit sauce, fresh cream, stir-fried vegetables, chopped chives, and butter and mix.
Put it on a plate and finish with crispy breadcrumbs and other chives.
“Crispy Breadcrumb”
2Ts bread crumbs, a little salt
1. In a frying pan, toast the breadcrumbs brown without oil and season with salt.
