This time, we have recreated Arlecchino's special dish "Hearthfire's Trail"!
Raw meat is expressed as roast beef based on Italian tartare.
The sauce has a tomato base and is flavored with rosemary. I sprinkled hazelnuts, which are often eaten in Italy, under the meat.
We have also reproduced the pattern of the plates and the proportions of the bread sizes!

20 g sugar
4 g salt
18 g butter
190 ml of lukewarm water (30-40℃)
Dry yeast 3.3 g
◆Tomato sauce
50 g tomato puree
14 g red wine
salt 0.5 g
Paprika powder 0.5 g
White pepper 0.5 g
A bunch of rosemary
◆Roast beef 500g portion
Beef thigh 500g
Salt 5 g (1% of meat weight)
◆Toppings
10 g hazelnuts
*Preheat the oven to 230℃ and bake at 210℃ for 30 minutes.
*Secondary fermentation is done in the oven at 30℃ for 45 minutes.
*Low temperature cooking is done at 58℃ for 2 to 2.5 hours.
*Use a little strong flour for dusting.
