I think your recipe is the best I could find on the internet. All recipes seem to be very refined with a lot of trial and error on your end before posting online with very clear explanation. I have mad respect for your commitment. I own a small cafe in my country and most of my pastry and cake are using your recipes with a little adaptation. I prefer light cakes which are not sickly sweet. I think this red velvet recipe is just what Im looking for. That lighter cream cheese frosting is genius!!

This recipe is superb! But something I found out the hard way is that you really need to use the "correct" type of cream cheese. I was always using "Philadelphia" cream cheese, the one that comes in a small box. But this one is cream cheese to spread on bread for example. But I never found another type, so my cream cheese was always too runny to do a layered cake. Then a new shop opened in my village that had products from other places and they sold cream cheese in block size and not in that small box. When I read what's inside I saw that the amount of cheese of that one is way higher than the other one. So I used it to try out and now the result is that I can finally make a layered red velvet cake! 🙂

Great tips and well done video. Never knew about holding a piping tip over another one rather than filling a whole new bag, that was sneaky (and useful). Would love to hear all your tips for Macarons in a video!!!
i think you're the only one who noticed it! good stuff. extra tip: you can use a smaller piping tip over a larger piping tip, and not the other way round.

Hello Chef, i have come back after trying your recipe, must say this is my favorite one so far because it's light and soft, but unfortunately the weather here is the enemy so the frosting doesn't hold up very well, i had to add in a bit more powdered sugar. But overall, great recipe, perfect execution 💯
