Today I will make a beautiful red velvet cake.
I made a beautiful red velvet cake in a simpler and easier way.
I made it from the existing too brittle texture to a more elastic and soft cake texture.
I want to say that it is a very soft and fluffy cake.
The ingredients are also relatively simple..
Today I made it using red rice flour.
I was able to create a beautiful red color even with a significantly smaller amount of pigment in the existing recipe.
♥ What is red rice flour?
First, red rice is made by fermenting red koji mold on white rice.
It takes about 4 to 6 weeks, during which time the natural red pigment is produced and the white rice becomes red rice.
There are about 50 types of red pigments produced by the red yeast fungus, and the types and colors vary according to strains, culture conditions and time.
So, even if you buy a product from the same company, the color changes at that time depending on the product.
This red rice was a valuable herbal medicine ingredient that was presented to the Chinese imperial family in the past.
Monacolin-K from the fermentation process lowers cholesterol, helps improve blood vessels, prevents adult diseases, improves digestion, and is effective in relieving abdominal pain and diarrhea.
After drying the red rice, the powder that has been pulverized and sterilized is red rice flour.

10 g Honey (1/2 Tbsp)
75 g cake flour (1/2 cup)
5 g cocoa powder (1 tsp)
15g red rice flour (1 Tbsp + 1/2 Tbsp)
-- (85g cake flour + 10g cocoa powder + red food coloring) - Without red rice flour
35 g milk (2 Tbsp + 1 tsp)
30 g unsalted butter (2 Tbsp)
Food coloring (red color)
♥ Cream cheese frosting
180 g cream cheese (3/4 cup + 2 tablespoons)
35 g sugar (3 tablespoons)
10 g lemon juice (2 teaspoons)
3ml vanilla extract
235 g heavy cream (1 cup) (35% milk fat )
● Coffee syrup
50 g water (3 tablespoons + 1 teaspoon)
30 g sugar (2 tablespoons + 1 tsp)
5 ml kahlua or rum (1 tsp)

1. Weigh water and sugar
