Ingredients Needed for this recipe:
Makes 12 cupcakes
1 1/4 cup Plain flour
1 1/2 tablespoon Cocoa Powder
1/2 teaspoon Bicarbonate Soda
3/4 cup Sugar
1/2 teaspoon Salt
1/4 cup Soft Butter
1 large egg
1/2 cup Oil
2 teaspoons White Vinegar or lemon juice
1/2 cup Milk
1 teaspoon Vanilla Extract
Gel Red food colour as needed
For the Cream Cheese frosting:
230g Cold Full fat Cream Cheese
( Make sure its Full fat. The others will not work)
2 1/2 cups Icing sugar ( add less if you like it less sweet)
1/2 teaspoon Vanilla extract ( add more if you like)
1/8 teaspoon Salt
1/2 cup Soft Butter
Notes:
1. Substitute 1/2 cup Buttermilk if available in place of the milk and vinegar for the cupcake batter.
I never had buttermilk available so had to use milk and vinegar.
2. Make sure all cake ingredients are at room temperature.
