Ingredients:
1 cup Fresh mint leaves
1/4 cup Freshly grated ginger
1 cup Freshly squeezed lemon juice (about 6-8 lemons)
1/2 cup Sugar (adjust to taste)
4 cups Cold water
Ice cubes
Lemon slices for garnish (optional)
Mint sprigs for garnish (optional)
In a small saucepan, combine the sugar with 1 cup of water.
Heat over medium heat, stirring until the sugar completely dissolves.
Add the freshly grated ginger and mint leaves, bring the mixture to a boil.
Once it boils, reduce the heat and let it simmer for about 5-7 minutes.
Remove from heat and let it cool completely. Strain the syrup to remove the ginger and mint leaves.
