Essentially there are two Alex's. Alex's plan was to have her consciousness transferred in Natalia and as the final part to do that she killed herself. But right before she killed herself she got afraid, which activated the T-Phobos virus in her. The virus revived her, made her into a monster, Alex believes her plan failed and blames Natalia. Later Natalia wakes up from her slumber and Alex's mind is trying to take over Natalia's. You can see this happen in Natalia's DLC and you can see Mind Alex at one point in Barry's Campaign. Monster Alex believes herself to be the real Alex and is why she wants to kill Natalia and calls her false throughout Barry's campaign.

Since RE4 they have been adding similar enemies AND sometimes using Mega Salvador's move (In RE5 sometimes when you defeat a Chainsaw Majini he will rise again and will attack you like Mega Salvador)

Vulcan Blubber is the barrel boss. The one you are thinking about is Dhurlga, and is more of a powerful enemy than an actual boss. Both wiki and walkthrough says this, so it wasn't included in the video.
