I ain't a host but have been cooking at restaurants for years and I got a story that is a bit of a trip. A couple of years ago I worked at a small sports bar/pool hall as a cook. The owners did essentially everything including the occasional taco Tuesday and Mexican themed dishes. Now when I got started they made the taco meat using Cajun seasoning. Very bad start but eventually I brought in some food and made my own Mexican seasoning mix. The owner and her sister the manager and the managers daughter all tried it. It was good and made with stuff they already had so it became our official taco seasoning mix and for the quesadillas to. Later I took it on myself to make a chimi changa recipe for them as they had a large amount of canned black beans. Their supplier left with them and wouldn't take back. So I made a beef and bean chimi changa recipe all we needed was a good food processor. I brought mine from home. Needless to say both the taco mix and chimi changa's became big hits. Later the owner tried a small bottle of gochujang BBQ sauce. And wanted to buy a bunch of the premade sauce and it was five dollars for a small bottle. She was wanting to do this for a wing sauce. I told her I liked the idea but to let me experiment see if I could make something better. But cheaper so I buy some gochujang off Amazon ten dollars for a container. Mixed up a sauce using either stuff they done had or was cheap to buy. It was also loved well eventually we had this one lady thinking we had a staff of mostly Asian and Hispanic cooks when she asked to meet the people who made that stuff I was brought out. She asked if it was a joke and later went to accuse the owner and her family of being racist. Trying to not let the minority staff get the glory. She couldn't realize that one person could not only make those changes but could understand how to cook food from other cultures. I explained that I studied a lot of Spanish and Mexican cuisine as well as Asian cuisine. Mostly watching RU-vid videos and she blew up. Eventually the bar ran her out and banned her from ever coming back. But she still insisted that a white person couldn't have made all that food and thought we was racist. She really didn't like me telling insinuating that her belief that a person could only cook food based of their culture or heritage was actually more racist. I eventually left that place and took my recipes due to a falling out between me and the owners family. But I was told by friends that still worked there at the time that they eventually let her back in. When she eventually came back in and ate she asked again about all that and when she was told I quit. And that the recipes were infact mine and I took them she got so mad. Not only that she was wrong but that she couldn't eat them anymore. I swear some people are so ignorant.

I think that everyone in customer service can relate to this "being blamed for things that are absolutely out of your control" example: prices of things, being out of things and the countless other things above our pay grade and not our fault.

Worked at Friendly’s when I was 18… went out back to smoke n a coworker was crying. A fantastic manager was with her n said ‘we just make tuna melts, there’s no reason to cry over tuna melts’ It stuck with me for near 20 years. … yeah it’s essentially ‘no use crying over spilt milk’…but the impact it made was so much greater. N I sorta see life thru that lense still.

I once was a host at a large Indian casino at a fine dining restaurant. Until then I never had any appreciation for where I was seated at a restaurant. What a thankless job. Everybody gets to be your boss. All of the servers and all of the guests. This casino took to go orders but NONE of the staff wanted to take the order because they were sure they wouldn’t get a tip for the order. But, as the host I couldn’t put the order in myself. So there I stood like an idiot with an order in my hand . Oh by the way, we did not get tipped out.

I've been binging these podcasts the last day or so, I'm fining them very entertaining! I do have a little story about the lunch vs. dinner menu. The last time I was in Rhode Island visiting my boyfriend (I'm in Kansas, but we make it work🙂) we went to this one restaurant we found one day for dinner in Newport that had the best clam chowder and clam cakes I have ever had. On my last day there we decided to go again, however this time it was maybe 1:30 2:00, we started looking for the chowder and clam cakes but we didn't realize it wasn't available during lunch. We politely asked the waitress why we couldn't find them and she let us know. I told her that's why we came but I understood and asked if there was anything she could recommend. My boyfriend chimes in and tells her it's my last day in RI and I'm from KS and I love the seafood in RI and what's the best seafood lunch dish they have? She looks at me and says, "you know what, the chowder won't be ready for another couple of hours, but I bet I can get the cooks to get you some crab cakes." (imagine all that said in a thick New England accent 🙂) I told her that wasn't necessary, I didn't want to make more work for anyone, she nodded and we ordered our meals. It was still a great meal, I had lobster rolls and I don't remember what else. When we left, the waitress that served us handed us a to-go box and said "Here, I had the cooks make a double order of the crab cakes for you, no charge. My family owns this restaurant, and I'm so glad you liked our food. Have a safe trip home, sweetie!" Best restaurant trip ever! (or uh, in Rhode Island speak, EVAH! 🤣) That woman went above and beyond what she needed to do, even as one of the owners.

I used to be a night time host at a fairly popular 24hr restaurant. Night time didn't normally have a host. But nights were getting busier and I could learn the menu and procedures at my own pace while working the host stand. I loved being a host, it was low pressure and I helped out the servers when I could. I felt awkward when the restaurant was busy yet I had to wait for tabled to empty to sit anyone. So I started refilling tables drinks and getting them water's just to give the servers more time to get to them. Over time I didn't want to be a server.. it seemed much harder then hosting and much more chaos stress. But eventually I had no choice.. a server was fired and I was told to take his spot.. I was sad since there no one to take my place as host and I was nervous to be a server. And it was crazier.. the night got so busy.. one day I was occupied with a table and another table bolted with a bottle of wine they didn't pay for... the wait for tables was insanely long since we didn't have a dishwasher on duty so we had to wash the dishes and buss tables. I had customers yelling at me when they could be sat, and yelling at me where their food was, had other tables flagging me down for more help.. pretty sure my Brain just shut down, I couldn't breathe, and I just passed out since the next thing I knew I was on the floor.. I still have nightmares about that night.. never want to serve again.

I was a host for about 7 months to a terrible manager/owner. I was the only host and I also doubled as a bus girl and sometimes server because the owner didn’t want to hire more people. That job was tough, and whenever anything went wrong, even if it wasn’t my fault, I got blamed for it, regardless of if I was even in the area or not. A server lost a ticket? I must’ve moved it. Servers spilled drinks? I had to clean it up. Don’t get me wrong, the pay was nice, I was able to put a nice chunk away for college while still having money to spend. But I wouldn’t go back there if my life depended on it. That place was toxic. Moral of the story, make sure you know what kind of environment you’re getting into when you look for a job.

I went to a restaurant a couple months ago and our reservation was for 6pm. The kitchen took so long to get our food out that we had barely finished our meals when our server told us we had to move in 5 minutes because there was another reservation at 7pm for our table. We didnt even get to order dessert because they only allowed for us to have the table for an hour and we didnt get our food until 6.40.

About the story about the family not eating without the woman. In my family it’s considered rude to eat our meals until everyone at the table gets their meals. The exceptions were if there were like salads or if one person’s dish took an especially long time to cook. Other than that, if I got my food a few minutes before everyone else’s, I would have to wait to eat. Maybe this is just a southern thing though.

I still remember my first shift as a restaurant host. It was during covid. This random guy comes in without a mask and starts getting huffy with us because no one had served him yet. This man had sat himself on our patio without being sat there. Literally, NO ONE knew he was there. When we tried to explain that and offered to get him seated, he was still angry. Especially, when we asked him to wear his mask whenever he came inside. Ultimately, he yelled at us, told us that we must be high, then storms out if the restaurant. A few minutes later, just before getting into his taxi, he shouts at us again, calling us high and swearing never to come back to the restaurant again. My coworker and I just kinda looked at eachother and laugh. Another customer joked that the guy must have been hugh on something. And guess what? The shouting man returned to the restaurant a week me ater and was much better behaved.

When I was a host I got tips from take out orders and sometimes the server would give me a couple dollars. But even though I did all the take out orders and people thought the tips went to me, the tips I got were split and shared between everyone working that night. Including the manager and the dishwasher. So someone could tip me $6 but I only got a dollar of that. whenever people asked me if they could tip me I said "sure but it doesn't go to me" and people stop tipping or would do it sneakily haha.

One time I was in a local sushi restaurant. They are pretty small, but super busy. So one time, me and my dad got sat at a 4 person table (because it was the only one available). So, when a party of 4 came in, and only a table for 2 was open, the owner (amazing, nice guy. He sometimes makes fun exclusive foods and gives them to nice costumers) asked us to move to another table. For us, it was no issue. I did ask my dad about it, cuz I had never seen that before, but really we just moved, and still tipped like 25%. Anyways, I would just feel so bad if that owner said it to someone else...

When I was a host I actually got a pregnant server fired because she was being so mean to me. I didn’t mean to get her fired I just wanted the manager to make her stop being mean to me when I had never done anything to her. She was mean to me because my sister worked there too and she and my sister didn’t get along. I also remember getting a manager in trouble with the owner because he kept shooing me away from the host stand so I went to the owner and said “I should just go home because what the f**k is the point of me being here if he’s doing my job”. It was a busy night and I was already on edge so it had kinda been a last straw kinda thing.

They’re right about servers getting mad if you seat out of order but the reason is because of what they said early in the video, that’s determining how much they make. If someone has 4 tables and you have two, you literally have half as much opportunity to make money. People get pissed when you mess with their paycheck. And it’s not that hard to seat in rotation unless there is literally no other option. Pro tip: just use a paperclip and physically move it to the section that gets sat next.

you’d be surprised how many times there’s literally no option. at my restaurant the servers all have 4 table sections, 2 booths and 2 tables. literally almost EVERYONE wants a booth. the old people can’t be too far back but also they also don’t wanna sit under the air conditioning. the karen’s who are too good to sit in a chair and the million other things that go wrong. you absolutely cannot please the customers, the servers, the managers, and the kitchen at the same time. it’s impossible

@@emich714 trust me lol I know. I seat people too. But like I said, as long as you follow the rotation and communicate openly about having to move people. Like for example at my restaurant everyone wants to sit in the bar so the servers kind of have to deal with it, but the trade off is that some people really want to sit by the window and the bar has no Windows. Beyond that, there’s one shitty section that’s like all tables, so people don’t want to sit there bc like you said for some reason people are allergic to chairs lol, but there are a couple extra tables in that section to compensate for it. If the server in the bar gets sat out of order, they just get moved back to the bottom and you continue the rotation. Same if you seat someone and for whatever asinine reason they decide to move, then the servers do their little trade or whatever and sort it. Also, you have the power of suggestion I’ve found. When I’m hosting I don’t ask people if they want a booth or a table, I say “is a table ok” and they almost never want to contradict you or be annoying so 95% of people will say “that’s fine” lol. The ones that don’t, well that’s out of your control. As for air conditioning. Restaurants are cold and I don’t understand why nobody understands that lmfao. But our vents literally run overhead for the whole restaurant so everyone is always equally under the vents and I just tell them they’re in the warmest part of the restaurant or I will put them in a corner of whoever’s section is next so they think there’s less of a draft (like that makes a difference). Just tell them “I can move you, but honestly this part of the restaurant is (farther from the door, blocked off so it’s less drafty, nearer to the warm kitchen, warmer than beside the door or window)” Literally make up whatever you want lol. Say “I can find you a new table, but personally I always stand in this section because it’s the warmest.” “I know it’s bothersome, I get really chilly too, but I promise it’s colder on the left side of the restaurant bc they crank the thermostat down on that side.” And then usually they will just accept that, and again a fraction of them will insist on moving anyway but that’s out of your control and it’s a much smaller fraction. But fr I don’t get why people think it’s not the same temperature regardless of where you sit lol that’s what the AC is for. Anyway, point being that you won’t ever please everyone, but you can choose your words carefully to suggest things to people and make them less contradictory, which usually works in your favor. And if the servers bitch at you, just tell them the customer wanted to sit in the other place and you can’t do anything about that, you are following the rotation and doing everything in your power. They’ll probably bitch anyway, but you know it’s your fault. But the point still stands that servers aren’t being crabby to be crabby. Unlike hosts, they aren’t paid hourly so their wages aren’t consistent at all and if they aren’t getting sat then they are making less money, and so it is very personal for them bc they’re not at work bc they want to be, they are trying to make money to live their life. They take that personally bc there’s not much that is more personal than that. It’s not your fault, and as long as you follow the rotation and do your job correctly you can just know for yourself that you did everything you were supposed to, and the servers can be mad at the customers if they want.
