Drew Talbert is the GENIUS behind the hilarious series Bistro Huddy. Drew has been a server for DECADES, making him the perfect person to chat about all of the craziness that goes down in the restaurant industry. From the rude customers, to the irresponsible managers, and even the... questionable things that happen in the back... Drew is here to spill ALL the tea and set the record straight. The service industry is NOT for the faint of heart!

If I saw my waiter was eating between serving me, I wouldn't be complaining because they're eating. I'd be complaining that they're not getting a break so they can eat in peace

i taught my older family to stop worrying about wait times by telling them sometimes my only bites while working were still done when i had tables. i cannot tell you how much i'd love to make a riot for servers now that i'm done with the job.

@@HoodedDemonPlays I've worked a number of jobs in the past 20 years, and the places that don't give breaks are always THE most toxic work environments. The places that require breaks per company policy are always the ones with the most positive work environments. It's not the breaks that create this, but the respect for their employees that extends far beyond not just working you like a slave. It's not about what's legally required, it's about what's morally right.

Parenting tip. In order to teach my kids how to be in a restaurant I started taking them individually with me for ice cream on Saturday or Sunday (so twice every week for me - win!). I'd go to the restaurant in the dead hours and prepay for a single sundae with 2 spoons. It cost about $6 and I would have my kid hand them a $10 and to keep the change. They would then be asked to make a typical sundae. Not a larger one for the tip, but a typical size. I'd sometimes call ahead and ask for a problem to happen, like a delay. I told them never to make them ahead of time. Just to do it in the normal fashion. After a few times, I explained what the expectations were to my kids. They were around 5-8 (the older struggled with autism) to start. The minute they violated that expectation, we would leave. That sundae could go to another table or be thrown away. We never took it to go. We started with no yelling and to stay in your seat. Once it was clear they were doing well, we added more expectations (and we upgraded the sundae and the tip). Both were capable of having time with me focused on them without having problems. The problems really happened when they started getting entitled. Once my younger threw a fit because they brought out a strawberry one and they wanted chocolate. I called ahead and told them to do it. I paid twice. I'd have kept the strawberry and given the chocolate over. But they threw a fit. So they got nothing. We just packed up and left. That strawberry sundae (paid for) went to another table with my compliments. I always went when it was slow but not at the same time after one family started bringing their screaming kids in hopes that I would give them a bunch of free stuff. Pass. These servers *LOVED* me. I tipped very well, got out fast, and I was teaching my kids to be pleasant to waiters. I was also teaching them not to need me to pay attention to them as they got older. Once I had them bring a book and we quietly read. Another time we played the quiet game. It was age appropriate and I didn't hold servers hostage. I was just giving them one thing to work on until they mastered it. After they got older we switched to monthly dinners with regular meals and once a month we did ice cream as a family. I didn't have a lot of money but we were able to go and do this because the investment was important to raise kids who saw waitstaff as people, not servants. I started because one of my kids went to dinner with friends and talked about how they were doing things that horrified me and it was okay. The next time we went out, he tried it. He tried it the first time we went for ice cream and was shocked when I took him home with no ice cream and no to-go bag. It eventually sunk in that I was serious and I would walk away. That money was spent when we walked in, but the ice cream was a reward for good behavior only. If they didn't behave, off we went. Now? My kids are very polite, tip well, know how to make things easier, and they know when to stand their ground. Because you best believe I asked if a waiter was okay being rude to my kid so I can teach them how to respond (age appropriately). When we moved, I took both kids there for one last dinner. The manager tried to comp it but I beat him at his own game. I left the entire cost in cash on the table, plus tip.

you’re honestly legendary for this. as a server i usually dread getting sat teenagers, they don’t know how to tip. not because they’re trying to be rude, just no one ever taught them, and i was one of those teenagers too (my parents don’t tip bad, they just didn’t talk to me about money growing up). but occasionally i’ll get a table with teenagers that actually tip 20% (or more sometimes!) and i think to myself “those kids were raised good” every time.

Talking about kids in restaurants, my dad once took me on a date with this woman and her son to Pizza Hut, and she just let her son eat parmesan strait out of the shaker. Dad even pointed it out, and she said it was fine. Of course my dad let our server know, so she could throw the rest out and have it washed. 1) At one point I was working in a hotel kitchen. With that said, there was a waiter (Chris) who was quite flamboyant. One night, he was serving a Texan that was "all hat and no cattle." The Texan was trying to impress a blonde that was less than half his age. Chris was becoming more and more excited about the Texan because he was ordering the most expensive of items and late in the meal the bill was 900 bucks and Chris is thinking '15% of 900 bucks equals....' Anyway, when the Texan gets the bill he only tips Chris 5 bucks and Chris came unglued and literally chased the Texan (and his girlfriend) out of the hotel. 2) I got an order for buffalo wings and presented the order exactly as the recipe/menu required. The waitress took the order and soon returned the order, saying "The customer feels that the order isn't right." The sous chef heard this and pushed me aside, saying "Let me show you how to do this" making the order exactly like I did. The waitress took the order out and returned almost instantly, saying "The customer says it isn't hot enough." The sous chef took the gallon jug of buffalo sauce out to the restaurant, pouring the sauce out onto the table and intentionally splashing it onto the customer, saying "Is this hot enough for you lady?" Needless to say, she ran out of the restaurant. To my knowledge, the sous chef was never disciplined for the incident.

“Are we people!?” I worked as a jewelry designer for this store and the owner came back into the shop and started measuring the door. Turns out he wanted to bring in a new giant safe and it was too big to go thru any of the doors so he wanted to replace the door opening with a new one but get the safe inside first. This way the safe could never be stolen. That was fine. Well then he also heard me ask if we could get a screen door for back there as ut was so airless in that building that it gave me asthma. We discussed a security door with screen. all went as planned. Then the owner was saying “I still worry about someone coming in here from the alley to rob us. I could just weld this whole door shut! That’s what I will do! “ I said “Well I don’t think that’s allowed. Like by the Fire Marshall.” “Oh the customers wouldn’t wanna run out the back door anyway if there was a fire-they’d go back out the front!” I said “eff the customers! What about me?! What about Pat and Your Dad? Ee have to get out too! And this room is where the fires would probably start with the torches and chemicals and gases.” We compromised on legality in the long run anyway. The door legally had to be unlocked BUT even I did not want men with guns walking in on me back there. Atlanta jewelers were being stalked by gangs anyway (police gangs, regular gangs, International thieves and regular crazy men. It was super dangerous. We all got followed. Attacks happened. So he added a deadbolt which could only be opened by a key and we made a game out of finding the key blindfolded to simulate heavy smoke, and getting that door unlocked. We all eventually could do it. Good luck to anyone else. But yeah- he hadn’t considered our safety the first half of protect at all- was gonna weld us in there come robber or fire!

And good for you that you never encountered them, but we had a LOT of problems with little old ladies in their Sunday best cussing us out over 2 cents, having a call off, being out of stock of things, and one memorable time, saying some extremely out of line and indecent things about a pregnant deli worker because she had to excuse herself to throw up in the trash can behind the wall. Then my brother's fiancee worked as a server and they'd take up tables for HOURS, order only coffee and *never* tip them. They were abysmal and I met very very few that were decent, loving people. They made me leave the service industry because they got *bad* in the last few years. Really bad. @@xamyx725In fact, since you decided to say something - We had to ban a pastor for STEALING on a Sunday after church. EASTER SUNDAY, at that. Understand that - We banned A PASTOR FOR STEALING. Caught him red handed walking out without paying for his 50 piece fried chicken and four gallons of sweet tea because the store manager finally had enough of him complaining about 'sh*ty greasy chicken' which we made sure it was fresh oil and a clean fryer (and he called us some pretty horrific names to the point I wrote his local religious council and got him in trouble with his behavior) and getting a refund every single Sunday without fail. Told him he wasn't allowed to place any more orders for chicken, that we'd deny him service as was our right, since it was six months of him doing this to us - ordering the chicken, calling back and screaming and cussing at us so that we refunded him, and he'd come back that next Sunday for another order. So he just walked right out without paying. Said he was entitled to it as a 'Man of God' who was 'put upon by the devils in the store'... And he's only one of TWO pastors we banned due to bad behavior... but I'm glad you've lucked out

Interesting! I love that. I went to church for over 40 years. I never once heard that from a single preacher or pastor. I wonder if it’s a regional thing. My friend was a server for years, and he always said he’d be happy with 10% from the after-church crowd, since so many of their regulars gave a flat $2, $5, or $10 regardless of the bill. I've been there for 5 years and they were literally like family, we had amazing teamwork. I looked forward to working every shift and the money was fantastic, both as a host and especially as a server. We were usually CRAZY busy since it's a sports bar right across from a major sports center AND EXPO center. Our managers always had our backs, they were very polite and gave free food to difficult customers instead of blaming the servers. I'll miss them, but this gave me a lot of hope that I'll be able to find something like that again ❤

Chocolatier at a locally owned dessert cafe, shift manager level. I ran the store Saturday night, all Sunday, and Monday morning. Not only are the holier-than-thou customers a mess about working on the Lord's day (while demanding my service,) but I had a new hire try and get out of missing too many of his shifts by going to tattle to the owners about how I couldn’t be Christian and work those shifts. Owner, a Sunday school teacher, looked straight in this college freshman's eye and said "that's why we hired her." I'd come in at 9 or 10 during the busy season to cook before opening at noon while the deep south town was at church. My easter baskets were gorgeous and so were my bat mitzvah party platters.

The amount of people that were still trying to come in the building while there were literally firefighters on our roof was astounding. When we explained we were close due to the fire, people asked if they could sit outside on the patio. Rebecca!! Its funny that you kinda said "check your friends and family so they aren't acting like this" at the end, because I had an experience with my mom awhile back where I had to check her....lol She got an attitude in a store about something silly, and was so proud to tell me about how she got upset with the worker and told them she will never shop there again. I told her, oh i bet they are thankful you won't be returning then! She asked me why I said that and why wasn't I on her side... I said because if you don't like the store, you can choose not to shop there. But yelling at someone because you aren't getting your way was wrong. SOMEONE once told me when I was a child to be nice to others, and if you don't have anything nice to say, keep it to yourself and walk away. She got quiet and said, I was pretty mean huh? I said and you were proud of it, which YUCK! I told her, look, I try to find some small thing to make anyone I interact with smile... tell them i hope their day improves, or just compliment them... SOMETHING. There is just too much nasty in the world, I want to leave a little bit if kindness. She said since she's been doing this, every experience she has with other people has drastically improved :)

I feel so much for servers dealing with a lot of tables and impatient people. I dread going out to eat with my dad, for example, because if his water glass is not filled up when he wants it, or when the server disappears for a while to tend to other busy tables, he starts getting pissy about not getting great service. The server could bend over backwards to get him his drinks, but if they are not there right when he needs them, he’ll get extremely gripy. He hired underage girls so he could pay them less (the law at the time was that kids under 16 didn’t have a min wage - so he paid them $5 /hr) and charged them for eating at the restaurant, as well as rent for the trailer he let them live in (this was at a beach resort). I was saving up money for University so I drove home every night. All the other 15 year old waitresses would live at the beach and make no money - but had a fun summer away from parents. The kid thing: so true! I have a daycare, so i obviously dont hate kids but the messes some parents leave because "its not their job," is astounding. I swear I clean up our tables and floor before we leave with my young kids every time because I used to be a server and I hated it when they left a mess 😂

I worked at Starbucks through college - going to work sick wasn't even about the tips, cuz we were paid hourly, but it was entirely because if you called out, you were responsible for getting that shift covered, end of. There were times I had a fever and was expected to call every store in an hour radius to see if I could get the phone number of anyone who might be willing to work a shift for me that day. That's insane for anyone, but as an autistic person with social/phone anxiety...yeah, I very much adopted the mindset of showing up no matter what and hoping I threw up within sight of a manager so that they'd be obligated to send me home.

I used to work in the Publix Deli and our "lay down our lives for" was the crazy person who spent all day in the kitchen frying up the chicken. 100% one of the top 10 worst environmental jobs to be in. Now I crushed it out on the slicers but I made sure that whoever was in the kitchen had ice cold water, or ice cold drink, and I cleaned up after them and I made sure that my hands never went in those gloves. Anything I could do outside of the gloves I would bend over backwards and do. You don't mess with your line cooks, etc.

As a Christian and former server, I can 💯 confirm the Sunday lunch issue. It's so frustrating and sad to me. We Christians are called to be kind, generate people and it kills me that that is not what the culture sees. My only theory for why the Sunday lunch thing is true is that maybe they went to church & got convicted & are now taking it out on their servers? 🤷‍♀ I will also say that groups of women tend to be the worst tippers. So now when I go out with a group of girlfriends, I will overtip on my bill, hoping that it makes someone's day because it's probably unexpected.

This upsets me because my family were nice to everyone. Even when our youth group went out as a group, we were nice. Some would get a bit loud sometimes but one look from the server would have others tell the rowdy ones to take it down a peg and happily they did. Of course this was back in the 70’s, but still heard some people were not always nice.

My late husband , my sisers, I and many of our coworkers had to go into McDonald's on numerous occasions sick, even with strep throat (before I'd been on meds long enough to not be contagious) and one of my managers had to come to work with conjunctivitis in both eyes. Gotta love working with food and customers when contagious because it's that or risk becoming jobless and not being able to support your family. LOL!

I've been in restaurants for over a decade. Post-covid yes, we're still working sick, half because tips but also it's so skeleton crew everywhere now that they won't even bother covering your shift. I have dayquil in my server bag that I hand out like skittles. This last winter was bad enough that my GM took around a paper for everyone to sign that we'd stop coming in sick.....most of us signed it while actively sick.

29:00 I’m religious and used to be a server and that is REAL!!!!! The Sunday church crowd have the rudest attitude and are downright mean most times. I’ll never forget, I was fed up one Easter Sunday. There weren’t any kids at the table so I thought it would be okay and that I could finally deal with adults. I worked at a brunch place that served mimosas and this lady was just so offended that a young lady like me (I have a baby face) was working on Easter Sunday at a place that served alcohol no less (the horror 🙄). And she went on this whole rant to what looked like her husband and two other couples about every little thing that was “wrong” and clearly making her group uncomfortable. At the end of the meal she made a big show of giving me a card with her church and a Bible verse (you know the ones) and saying that I should come to her church and receive the gospel. She said she was Christian. I’m Christian. So obviously I made the biggest look of genuine shock I could and asked her if she was really Christian? I asked her to confirm like four times and then said that I was Christian and the way that she was acting not only did not display Christ but if I wasn’t already Christian I would be actively against whatever she put forward because of the way she was talking. It was not much, because I’m terrible at in the moment stuff. But MAN did it feel good seeing the look on her face and her group giving her a death glare. I didn’t get any tip from her, I wonder why 🤷‍♀️

Okay…I don’t comment often, but I do what to put this in here as an ex-server…the skit he wanted to do that was “not relatable” about the monkey…I kid you not, someone actually did bring an emotional support monkey into one of the restaurants I worked at 🥸😂 you really do see the craziest things while serving 😂

Ok as someone from Europe, I never knew the whole part of tipping that the server had to pay out the rest of the staff! That’s insane! We don’t do tips here but that really make me rethink tipping when I go to the US. Yes I still find it annoying but I never realised any of that as well. Still insane to think about but thank you for informing me on this

That just totally opened my eyes to why I got fired from a serving job. After 3 weeks I got pulled into the manager's office in the middle of my shift. I got fired for1. putting tips in my apron. I would do this so that I could go into the back, find my trainer and give her the tips without walking around the restaurant with money in my hand. I was never told that I wasn't allowed to do that. But I was told to clean off the tables including the tips. I had done this several times before and never been told not to. and 2. for not following my trainer around the restaurant. For the second one I wasn't following her because I was serving tables and I was trying to do my job as I was instructed to do. I can see now that someone was being territorial and wanted me fired.

I goto a bar where the bartender is also a substitute teacher. She said its easier dealing with us cuz she can tell us to knock it off, or cut us off and we actually realize we are getting out of control, but with the kids she can't do that she just has to deal with it till the end of the day. (Yes I know the first sentence was a fragment and the second was a run on 🤪)

I work at a restaurant. Not just the servers will come in sick. The line cooks have also come in sick on numerous occasions. There was a time when half the people in the back had masks because they were all asked to come in even though they were sick. They used the masks as a way to work around this serious problem.

Yes to being sick!! I had the flu, which started on New Years Day and I knew I still had to go in. I was a manager and we had a huge event going on. That week I still went in every day, and when I physically lost my voice- as in I couldn’t make any sound come out- I had to answer phone calls with emails. It was awful.

No matter how much I’ve struggled financially in the past, I never would make it the staffs problem if I were to go out to eat. They didn’t put me in that situation, I did. Be respectful and tip your servers. If you sincerely made a mistake and can’t pay for something then just tell them, don’t try to finagle your bill. From my experience, something gets worked out if you’re sincere and apologetic. Being manipulative and entitled doesn’t help anything. If you want me to have this plate remade “right” it’ll happen rather you’re rude or nice so don’t actively make it a negative experience and make yourself look like a Karen.

this was an amazing and insightful podcast. as a server, I do have one thought. I do not ever want to be paid a flat hourly wage in lieu of tips. if I couldn’t work for tips, I wouldn’t be in the service industry. i can make over $50 an hour or i can make like what.. $20? no thanks.

I worked in a fast service pizza restaurant from 2k15-21, and oh boy trying to call out when you're sick was impossible pre covid. We'd have drivers throwing up between deliveries, cooks coughing up a lung.... mind you every sing person who worked there was required to have a food handlers card/permit, and food safety for where I worked said if you are sick at all STAY HOME. MGMT: eh, can you still come in we cant find anyone to cover, mgmt also never called anyone half the time or would have you find your own replacement. I also worked up until the week before my daughter was born because they didn't get a temp shift lead to cover at our store until then.
