Chole Recipe:
Soak 250 g chola overnight or for 5 to 6 hours. Boil soaked chola with 1 and half glass water, 1 Tsp salt, 1/4 tsp turmeric powder, 1 bayleaf, 10 to 12 black papers, 1 cinnamon stick, 2 cloves, 1 star anise. Cook till 5 whistles.
In a pan heat 1 tablespoon oil. 1 teaspoon cumin seeds, 3 medium size onion, 3 green chillies. Cook till golden brown. Let it cool and grind to a smooth paste. Keep the onion paste aside.
In a pan heat half cup oil. 1 and half Tbsp ginger garlic paste. Cook for 2 to 3 minutes. Add 1 teaspoon red chilli powder, one pinch turmeric powder, 2 teaspoon coriander powder, 1 and half teaspoon kashmiri Lal mirch powder. Add little water and cook till oil separates. Now add onion green chilli paste, 3 tomatoes paste, 1 tsp amchur powder or Chaat masala, 1 Tsp Chole masala or garam masala, 1 Tbsp Kasuri methi and salt to taste. Cover and cook on low flame till oil separates. Stir in between. Once oil is released add boiled chole. And cook for 4 to 5 minutes. Now add chole water after removing the whole spices from it. Cook till it thickens. Once thickens turn off the flame. Serve with Kulcha or Bhatura.
