Reverse Seared Steak - Camp Chef Woodwind - How To Reverse Sear A Steak On Pellet Grill

This Reverse Seared Steak was cooked on my Camp Chef Woodwind Pellet Grill. The thing that made this Reverse Seared Steak better than cooking it on a "normal" pellet grill was that I was able to Sear the Steak off using the Side Sear Box that is available on the Camp Chef Woodwind Pellet Grill. Reverse Searing is definitely the best way to Cook A Steak in my opinion, whether you are cooking on a Charcoal Grill, Pellet Grill, or even in the oven.

How I Reverse Seared This N.Y. Strip Steak on the Camp Chef Woodwind:
* I seasoned the Steak with Salt and Pepper and let it rest for about
30 minutes.
* After the Steak Rested for 30 minutes I put them in them in the
smoker on 225 degrees.
* When they hit 114 degrees internal temperature I removed them
from the grill and let them rest while the sear box came up to
temp.
* When the Camp Chef Side Sear box was screaming hot I grilled
them for a about 45 seconds, then turned 90 degrees and grilled
another 45 seconds, then flipped again and repeated.
***This is something that you need to play by ear. The timing may be different each time you cook a steak*****
* After The Steak was Seared I let it rest for about 15 minutes before cutting into it.
Here is a helpful guide to help you get your desired Steak
Temperatures for Steak:
Rare 130 to 135°F
Medium Rare 140 to 145°F
Medium 155°F "YOU"RE ABOUT TO MESS IT UP"
Well Done 165°F "NOOOOOOOO"

I see so many people make the same mistake of not rendering/searing the sides of the steak. Just hold it with the tongs and sear that fat on the sides of the steak and you'd be in for a whole lot more flavor my friend. Thanks for the video!

Thanks for making the video and keeping it simple and to the point. I recently purchased the Camp Chef 36" with sear box. I'm about to reverse sear a couple of filets for my wife and myself using your suggested method. I'm betting I'll be licking my fingers too! Lyle, your RU-vid sprinkle cracked me up! LOL! I sure do appreciate how you laid out each step of your reverse searing process. Even a very amateur cook could follow these directions! The intense heat from that side-sear box did it's thing! Great job!

I wish I could look as cool as they guy does when he seasons his food..That side sear box is a game changer. No doubt. I was actually thinking about getting a small gas grill before Camp Chef sent this to me. This is like having two grills in one

I have a Camp Chef SmokePro XT with the sear box, and it definitely puts the sear onto you favorite meat, I did my New York Strips w/hickory pellets and finished on the sear box, great cross-hatch marks on the steak and done to perfection. These steaks would be $60/ea at a fine steakhouse.

I love that sear box. It's a great addition to the smoker. I especially like it because I dont have a gas grill, so it comes in handy when I just want to grill something.

Man, it is 10:40 pm and now I am about to starve after watching this video. Those steaks look awesome. My wife is getting me a Camp Chef for Christmas. I am dying to cook on it now. I have an electric Masterbuilt and it just doesn't give me the smoking like I want. I have to add wood chips every 30 minutes and some times I forget to go out and it won't be smoking for 45 mins our so before I get back out there. I like the idea of setting it up and forgetting about it. I always cook two Boston Butts for Thanksgiving and Christmas because we go to my wife's cousin house and we all eat there. They are good but I want that smoke ring and good bark. Hope to see some more of your videos soon.

I am not a huge fan of my Masterbuilt. I really only use it for food that needs to smoke at low temps like salmon and jerky. You are really going to love the camp chef smoker. Which camp chef are you going to get?

Mr. No Hippie BBQ, do you remember that great old song called "Stay In My Corner", by The Dells? Well sir, after seeing how you made those steaks do what it do. I feel like singing "Steak In My Corner"! By the way in the spirit of full disclosure. I affectionately call you "The Sneaky Brisket Man", with no negative connotations or implications. Most BBQ Chefs I like have that "brisket stomach". You don't, but have one mean BBQ knock out punch! And the BBQ world won't see you coming! Plus you always take the best slice to sample. Well deserved I might add, and job well done! Semper Fi!

I'm curious how well the main cooking surface can sear a steak. spec's say that with the slide open, it can reach 650. it seems like that would be enough to sear, but I can't find anybody mentioning this one way or another since most people have the searbox/sidekick. just trying to save a few hundred dollars if possible!

The sear box isnt a necessity. It gets up to 900, but if you're trying to save money, you'll be fine without it

The sear box doesnt get messy at all. I just did take the grate out and wipe it down, but it was really easy to clean

Can you turn the heat down on the sear box to cook burgers a little slower than at 900 degrees? I really like steak and these looked great. Like you show, finger licking good...
