RHNB-Brick Of Velveeta 

I don't trust Velveeta one bit...I'd like him to do a side by side Velveeta vs real cheddar but that would be such a waste of good cheddar.

In that respect, it's closer to real cheese than margarine is to butter: margarine is made primarily from vegetable oil, contrasting butter's dairy origin, though some margarines do contain some milk. What's more, also according to Wikipedia, Velveeta was at least at one point (in the 1980s) made with genuine cheese, though the wording may imply that's no longer the case, I'm not entirely sure. But I would be just as quick to call Velveeta "fake cheese" as I would to call margarine "fake butter", perhaps even faster: this may just be my opinion, but as much as I prefer butter to margarine, I find the difference in quality between real cheddar cheese and Velveeta to be much wider. For reference, the ingredients of Cabot Seriously Sharp Cheddar Cheese, also probably similar in most other real cheddar cheeses on the market: "Pasteurized milk, cheese cultures, salt, enzymes, annatto (if colored)".

+Stephen Raymer I work in a cheese plant; Velveeta is a brand name for what's essentially a generic type of what we call process, short for processed cheese. The cheese trimmings and leftovers from batches that can't be run into other batches for shredding, etc, all get dumped into vats and melted down, then combined with all kinds of vile shit to increase its volume and give it more substance than just melted random cheese. If it's name brand stuff like Velveeta it'll be relatively decent in quality, but the stuff that goes into shredding or slicing for food service applications (done to increase the meltability of the cheese, it's often used in consumer blends like incredi-melt for the same reason), gets poured into 40# slabs and usually arrives with bits of gelatin (for binding) still on it that need to get picked off. Essentially, Velveeta is to cheese what buna is to rubber; they're both synthetics that start out with a proportion of the material they emulate, but they're more complex, difficult to manufacture, less stable and durable (or nourishing, if you're into eating buna, too), and provide a decent approximation of the most immediately desired elements of a product; Velveeta is cheap and fast to use and store, buna helped Nazi Germany continue their war effort without much real rubber. So, it's like the same thing.

The gel was still good, if you had watched to the end you would have seen him use a pellet gun on it.
