i would assume it smells like burnt marshmallow simply because it has the same look and now of days marshmallows are made from a supersaturated solution of sugar and water
It has a very high activation energy, meaning you need much higher temperatures or a catalyst to ignite it. It'd be very hard to get it to ignite with just a lighter.

By grinding the sugar into finer grains you're increasing its surface area, meaning you're lowering the activation energy needed for the combustion. Like I said, you need a catalyst in this reaction to ignite it with a small flame.

I can't help but wonder what would happen if you put the RHNB in concentrated sulfuric acid, since sulfuric dissolves nickel rapidly. You'd likely need a longer pair of pliers though!
the fume hood was probably there for the smell, and not so much for the possible dangerous reactions. what happened here is basically burning food to a crisp, so the lingering smell would be quite horrible i'd imagine
