The great thing about these rhubarb crumb bars is their thin layer of jam-like texture, made from a homemade rhubarb sauce. The top and bottom of the bar are an oat mixture that has a delicious texture without too much sweetness. When all three layers are eaten in one bit, it's a dessert made in heaven!

RHUBARB FILLING
1/2 pound rhubarb
2 tablespoons water
1/4 cup sugar
1 vanilla bean
CRUMB TOPPING
1 1/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup rolled oats
3/4 cup brown sugar
1 teaspoon cinnamon
3/4 cup (1 1/2 sticks) butter, room temperature
FOR THE RHUBARB FILLING
Clean and dice rhubarb into 1/4-inch pieces.
Add rhubarb, water, and sugar to a three-quart kettle. Scrape seeds from a vanilla bean and add to the mixture along with the bean.
Cook over medium-high heat, bringing to a simmer and stirring constantly to prevent sticking or burning, about 6-10 minutes. The rhubarb will soften and the water will evaporate, leaving a thick, jam-like filling.
Remove from heat and let cool.
TO ASSEMBLE
Preheat oven to 350 degrees.
Line an 8x8 baking dish with an aluminum foil sling. Spray with nonstick spray and set aside.
Mix together all crumb topping ingredients except butter until incorporated.
Add the softened butter in pieces and incorporate it into the dry mixture using fingers (you can use a pastry cutter but fingers work very well).
Mix until no large pieces of butter remain and the mixture becomes like wet sand in texture.
Lightly press 2 cups of the dry mixture into the bottom of a prepared pan.
Spoon over cooled jam mixture and spread evenly.
Evenly coat top with remaining crumb mixture. Make some large crumb chunks by pressing together crumb in hand (my favorite).
Place in preheated oven and bake until edges just start to bubble and crumb turns lightly brown, about 30-35 minutes.
Cool at least 2 hours before serving.

I made this and it was delicious!! Now, I had to substitue some of tbe ingredients. I used coconut sugar instead and more of the rhubarb sauce (I doubled the sauce and kept 1/4 of it for jam. I also did not have any tin foil or p. Paper so I just greased it generously with coconut oil. I was really nervous about it sticking or tasting sickly but the coconut gave it a delicious flavor!

I love that you have so many great rhubarb recipes!! I just picked, cleaned, chopped and froze 16 cups of rhubarb last night, and I have two more plants yet to harvest this week. Oh my gosh! These are so yummy. The topping has such a satisfying "CRUNCH"! Mmm! Delicious with a cup of tea, scrumptious with a scoop of vanilla ice cream! Your Rhubarb recipes are SO amazingly good! Love &I Prayers.

Yummm I bet these would be good with any fruit as the filling. Apples are seasonal here in australia atm so I might try that

Those look fantastic and so easy! I wanted to ask if it would be ok to use a strawberry or raspberry jam in replacement of the rhubarb you have in the middle? My daughter doesn't like rhubarb unfortunately. Just curious if the strawberry jam would be too runny.
