Beautiful Rhubarb! We don't see many recipes for Rhubarb, today and I haven't even seen it in produce, yet. My dad bought it every summer and my mom would make delicious Rhubarb cobbler and plum and berry.... My ex told me, "Move to Greenland with me." Hi Bonita hi Raymond. I am loving all the rhubarb recipes. I was telling hubby how I can’t wait to make some and he replied he can’t wait either lol. You take the fear out of cooking. You never get flustered. This is so yummy. I love the custard filling and the crust and the topping lol I like it all. Another yummy recipe with rhubarb, thank you Bonita! I haven't been able to do as much in the garden as I used to but I'm thinking seriously of getting myself a clump of rhubarb going. It's so good, and surprising that since it's so economical it isn't more widely used. Growing up in northern England everybody grew it and all our Mams and Nanas made pies and crumbles etc. regularly. Good memories. 👍😊🍁

You must have enjoyed a bumper crop of rhubarb for sure this year. Thanks for sharing this delightful recipe. If may suggest, for custards and such, try vanilla paste instead of the liquid. I used some for the first time just recently and the flavor enhancement of the vanilla is amazing. I now a believer -lol

If you want to keep it tart you could use cranberries. Otherwise I bet it would be great with strawberries and a bit of lemon juice, but you might want to reduce the sugar.
