Okay, Today we made a crowd pleaser of a coffee cake. This coffee cake is my husbands favorite one and it is made with spring fruit, strawberry & Rhubarb. It is great anytime of the year and I hope you like to give it a try
Recipe from one of my Church cook books
Preheat oven to 350 F
Ingredients
Rhubarb-strawberry filling ( I used a can of pie filling)
3 cups all-purpose flour
1 cup sugar
1 tsp. salt
1 tsp. baking soda
1tsp. baking powder
1 cup butter
1 cup buttermilk or sour milk
2 slightly beaten eggs
1 tsp. vanilla
3/4 cup sugar
1/2 cup all-purpose flour
1/4 cup butter or margarine
Prepare rhubarb-strawberry filling; set aside to cool. In a large mixing bowl stir together the 3 cups flour, 1 cup sugar, salt, baking soda and baking powder. Cut in the one cup butter or margarine till mixture resembles fine crumbs. :Beat together buttermilk, eggs, and vanilla; add to flour-butter mixture. stir just till moistened. Spread half the batter in a greased 13x9x2 inch baking pan.
Spread cooled rhubarb-strawberry filling over batter in the baking pan. Spoon remaining batter in small mounds atop fruit filling. Combine 3/4 cup sugar and 1/2 cup flour: cut in the 1/4 cup butter or margarine till mixture resembles fine crumbs. Sprinkle crumb mixture over batter.
Bake in 350 F oven for 40-45 minutes.
Rhubarb- strawberry filling
In a sauce pan combine 3 cups fresh or frozen cut up rhubarb and one 16 ounce package frozen sliced strawberries. Cover and cook rhubarb and strawberries for 5 minutes. Stir in 2 tablespoons lemon juice. Combine 1 cup sugar and 1/3 cup cornstarch; add to rhubarb mixture. Cook and stir 4-5 minutes more or till thickened and bubbly.
