Hi I tried this recipe, but the noodle didn’t come out like the store bought ones. It tastes like rice cake, and sticky too, and the consistency is very course. What brand of rice flour do you use? I’m in Australia, I’m using a rice flour bought from the supermarket. Thank you

Hi! I just made this recipe a few minutes ago but noticed as I was extruding the noodles, they broke and the strands ended up being pretty short. Any ideas what I did wrong? I tried to extrude slowly with the second batch and it still broke. 😓

The batter is perhaps a bit too cool and therefore the dough is not as elastic. Strive to have the batter around 115-120 F and this will help the strands to be stretchy when extruding.

what's exact measurement of rice flower, and other flower (?) or the second incredents that you mixed on the mixer prior to pour the sticky hot flower from the pot? I tried to listen 3 times but I could not get it. Please help. Thanks.

Xanthan gum is a carb created during fermentation. The powder adds thickness and stability to doughs similar to glutens. In this recipe, it gives the dough a stretchy and chewy texture. I hope that helps!

Hi anh Long, baking soda and baking powder aren't quite right as these are leavening agents, adding air to dough. If you don't have xantham gum, a better substitute is more tapioca starch as this also provides stretchy and chewy texture. :)

i had not used xanthan gum so my noodles break. instead of preparing rice batter , should prepare batter of tapioca starch, because uncooked raw starch develops rough, tasteless and break noodles. if can prepare batter from the tapioca starch no need to add xanthan gum.

You should put pro con or describe reason behind the additive because I didn't know what it is and have to look it up. Using xantham gum may not be good for some people especially people who has certain allergy (wheat, sory or dairy allergy). It may lower sugar level and cholesterol but it's also a form of a laxative causing diarrhea. It's not good to use more than 15 g of it. Also, you shouldn't eat it when you are going to have surgery. I was going try to make it for my mom to eat but Thank goodness I didn't because she was going to have surgery done and the recovery result wouldn't be good for her. They said to not eat it 2 wks prior to any surgery especially people with diabetes.
