This is a salsa that doesn’t rely on roasting tomatillos to increase sweetness and complexity. Nor does it use those tomatillos raw, preserving their bright (but simple) flavor and relishy texture. Here they’re cooked with moisture (I suggest you steam them in the microwave, but you could simmer them in water as many traditional cooks do in Mexico), cooled and blended with a lot of herbs and green chile into a beautifully green, luscious consistency. This salsa tastes so lively and fresh, it practically jumps from the dish.
NOTE: I suggest you make this salsa with leafy herbs that are usually used in abundance-ones like cilantro, parsley, sorrel and arugula-though parsley by itself can be rather strong.
To tell the truth, a combination of herbs always seems to taste best to me. You can use stronger herbs like basil, dill, sage and mint, though I’d either use less than what’s called for in the recipe or combine them with one or more of the herbs I listed first.
Herbs that are typically used in small quantities, like thyme, tarragon, oregano and marjoram, may taste out of place here, unless, of course, just a little bit is blended with other, leafier herbs.

Not sure if you read these comments and I’m not sure if you care, but I finally had the chance to travel to Chicago last week and the first place we ate was Frontera, and I was thoroughly impressed. The chicken mole was amazing and everything was delicious. I’ve been a fan since the PBS M1PAA days and it didn’t disappoint. Thanks for all you do.

Chef Bayless, I made my second visit to Frontera last week with my daughter and it was awesome, I saw you at the bar and had to say how much I enjoy your tv shows, and your food. Your wait staff at the restaurant is so attentive

I'm very happy to see the recipe is not just cilantro and done. My family have the cilantro gene and finding advice on substitutes is difficult. Besides the cilantro, the recipe lists TEN other herbs. Well done.

I love your recipe. I love the tart herbal bright and spicy tastes that bring out depths of flavor from heavy meat dishes. My mouth is watering on thinking about grilled steak, roast beef or roast pork with this salsa. Thank you!!

Oooooh I never thought about using anything else than cilantro but now I’m like wait a minute I need to try this! I’m Mexican and green salsa is my favorite out of all the salsas and Also I DONT KNOW WHY I NEVER THOUGHT ABOUT MICROWAVING THE TOMATILLOS, I’m over here boiling a pot of water 😭. We add chicken bullion to our salsa for seasoning/salt

Beautiful color! I always incorporate parsley, regardless of the style of food I'm cooking. It provides that fresh green herbiness, adding brightness without added acidity, and tends to recede from the front to provide support for other more distinguishable flavors.

Thanks for this, Rick. I hope sometime you'll do a video of making a tomatillo salsa similar to the Salpica version, with the hatch valley chiles. It's been discontinued now, and it's honestly the best tomatillo salsa I've ever eaten.

Love this salsa! Thanks so much for this! Grilled the marinated RB flank steak for steak tacos tonight and my family flipped out. Making queso fresco right now and carnitas tomorrow (slow cooker method). And... I didn't realize that the Frontera products were yours!!! No wonder I love them all!! Still laughing at the Serranos... lolol

I've only made tomatillo salsa once and after refrigerating, it turned into a jelly like consistency. I roasted everything first and blended. The tomatillos were sticky under the husk but I made sure to wash them well.

You can add water/stock and thin your salsas, or just heat it a little. Tomatillos have a lot of pectin, so they're easy to turn into jam - Not always what you're looking for in a salsa!

Just made a batch with a bit of epazote in it along with cilantro & parsley. I only used about a dozen leaves from the epazote. It definitely works if you like that flavor. I wish I had put more in, but this still makes a very nice salsa.
