Rick Bayless: Oaxacan Black Beans with Avocado Leaf

You can find Avocado leaves in most Mexican grocery stores and via the internet. In Mexico, fresh as well as dried leaves are available, though, as with bay leaves, dried ones have excellent flavor. Dried leaves with a vibrantly olive-green color have more flavor than pale ones. Unbroken leaves are typically a sign of careful handling and higher quality. Below, a recipe for Oaxacan-style Black Beans.
• 6 medium-size dried avocado leaves
• 1 to 2 árbol chiles, stemmed (optional)
• 3 tablespoons fresh-rendered pork lard, bacon drippings or vegetable oil
• ½ medium white onion, sliced ¼-inch thick
• 4 garlic cloves, peeled
• 2 15-ounce cans black beans, undrained
• Salt
Set a 10-inch skillet over medium heat. When hot, add the avocado leaves and turn every few seconds until they brown lightly and release their aroma, about 1 minute. Transfer to blender jar. Lay the chiles in the skillet and turn nearly constantly until they, too, are aromatic and lightly browned, about 1 minute. Transfer to the blender. Add the lard, drippings or oil to the skillet and, when hot, add the onion and whole garlic cloves. Stir regularly until richly brown, about 7 minutes. Scrape into the blender, leaving behind as much fat as possible. Add the beans with their juice and a little water if necessary to keep the mixture moving through the blades. Blend as smoothly as possible. Scrape into the skillet with the fat and cook over medium heat, stirring a few times, until the mixture has reduced to the consistency of soft mashed potatoes, 10 to 15 minutes. Taste and season with salt, usually about 2 teaspoons, depending on the saltiness of the beans.
These beans are wonderful (and common in Oaxaca) spread on crisp tostadas or Oaxacan tlayudas topped with fresh cheese (crumbled) or Oaxacan quesillo (pulled into strings) and roasted tomatillo salsa made with serrano chiles or the smoky chile pasilla oaxaqueño.

Hola, chef! I've followed you since your TV show when your kid was still very young. You're teach things that even us Mexicans don't know about. I'm from Central Mexico, but I learn about other regions' cuisines from you...things I didn't know we ate in other parts of the country.

I love avocado leaves. In Puerto Rico I only seen them used for grill fish. We would rub the fish with spices. Lay some avocado leaves on banana leaves and wrap the fish in the leaves. On the grill and it's amazing flavor.

Came looking for this after remembering my time as a line cook at a vegan restaurant where a little Mexican lady, our prep cook, would make a black bean soup with avocado leaves she toasted over the open flame of the burners. Quite possibly the single greatest thing I've ever tasted.

I need more of these. I love my neighborhood Mexican market. Also it's the only one in walking distance so it's my main go to store. They have everything, I don't know much about the chili peppers but I am learning. Bought some rendered pork fat from them (who knew) and made carnitas and pico de Gallo using your recipes. So good, I can't wait to try these beans. Thanks Rick

I just finally found avocado leaves in central Mexico where I live oddly not an ingredient easily found in this part of Mexico but so worth the hunt the flavor of these beans is out of the world.

Love this Mexican grocery store series. I made your carnitas recipe (oven method) a couple days ago and it was amazing, these would have been a perfect side. I could have used some of that carnitas grease instead of bacon grease, I'll remember to do that next time! Do you have a recipe for Costillas de Cerdo en Salsa Verde?

I made it! SO DELICIOUS!! I love Mexican food and have never tasted anything like it. Lots of restaurants under my belt but I’ve just made the best and most unique tasting dish I’ve ever had. Rick made me feel like a professional cook. I went to the Mexican grocery found the leaves and used just one Chile. Please try it, put it on anything. I think this will become my Mexican staple

you gotta cook these down until super thick, the consistency of soft cream cheese. I eat these in Belize... SO GOOD. They serve them with corn chips. Now I know how to make them! YAY!!!!

Definitely gonna try making this soon. I haven’t tried blending beans yet, I typically have been mashing with a potato masher. I guess it’s always good to work smarter and not harder, eh?

I just made Oaxacan black bean paste the other evening based on a recipe from the book OAXACA by Bricia Lopez and Javier Cabral and I can confirm that avocado leaves, even the old ones at my local subpar grocery, made a real difference in the flavor. Once again, Chef Rick knows what's up.

I think you may be seeing a chayote squash. They can be eaten raw or cooked. They are used in both sweet and savory dishes. If you like them you can plant the whole fruit and it will grow a huge vine with many many chayotes. I hope that what I’ve described is what you were seeing. Try one and don’t forget to peel it.

Yes! aguacate leaf! I also tasted it in a peculiar kind of tamales, where they mix the masa with the beans (whole, not blended), and it really tastes delicious! I have tasted it in the "frijoles de la olla" and it is so good! really nice to try them if you can get hold of some!!!

So glad I came across this. I purchased some avocado leaves to put them in my pot along with dried beans. But I don't always want to cook from scratch so this is a great recipe to have on hand when I'm short on time (or is it feeling lazy?).

Today I am fermenting carrots. Rather than a bay leaf for added tannins, I put in 2 avocado leaves. Can't wait to taste, but wait I must. At least a week for the fermentation process to happen.

Making this tonight! Rick, do you have a chart or summary of which herbs and fresh and dried chilies are most typical and beloved in the various regions of Mexico? Are avocado leaves used much in northern Mexico? I’ve been wondering what dried chilies would be used in a salsa macha made by a cook in Baja that would be different from the one made by a cook in Veracruz?

A simpler, rustic approach: saute onion, garlic with fat/oil, and ground up avocado leaf + dried Chile. Then add in dried black beans soaked in water + baking soda (1tsp/cup dry beans). Then cook til done (pressure cooker is much faster here), and serve or mash with a potato/bean masher for refried style beans.

Not all avocado leaves work because not all of them have the smell that gives flavor to the foods you put them in, just make sure your leaves have sone nice smell to them. Mostly the dried leaves sold in the stores don't have much smell to them so they don't do much.

tip do not put the whole teaspoons of salt at once...canned beans sometimes are too salty...so cook and taste...cook some more and taste...once u put too much salt it is almost impossible to take it out...

Fresh avocado leaves are always better but unfortunately not all avocado leaves have the nice and kinda strong smell that gives the foods flavor, you can still use any avocado leaves you can find I suppose but if they don't have much smell they won't add much flavor.

You can eat hoja santa raw, but no avocado leaves because they are tough(chewing) . In flavor both have the anis fennel flavor avocado leaves have more avocado - bay leaves flavor profile. Hoja Santa is more like root beer with fennel. In cooking avocado leaves goes very well with beans, fish, lamb barbacoa, chicken barbacoa and avocado salsa. Hoja Santa goes well with empanada de mole amarillo, which is the main ingredient, quesadillas, mole de olla all kind of soups using dry chilies go very well with hoja santa.

@@pigetstuck i did some edit too. I tried to said eat by chew on the leaves. I used to have a hoja santa plant. And we ate the leaves and flowers raw and added the branches yo soups. You can eat the avocado leaves too, but it has to be grounded tho.

Warning about Avocado leaves: Only leaves from the Mexican varieties are considered edible and have the nice flavour. Leaves from the West Indian and Guatemalan varieties are not considered edible. If you buy them in a store your are good to go, but if you are using leaves fresh from a tree, crush and smell it first. If it doesn't have an anise smell, it is probably not a Mexican variety and won't be good for cooking.

@@Notturnoir Haas is a cross between Mexican and Guatemalan families (check the Wikipedia article on it). There is a large number of varieties of avocadoes, check out either Wikipedia or search the web for "Pine Island Nursery Avocado Selection Guide".

Rick, I love Mexican food but I make it vegan. Aren’t you concerned about atherosclerosis eating bacon 🥓 grease? I saw an episode of Undisputed and your brother Skip was saying he doesn’t eat bacon because it’s just pure fat. He was following some of Tom Brady’s diet avoiding tomatoes 🍅.

@@therainbowkitty My Mexican friends in Mexico used to make fun of La Costena beans. I guess they consider beans cooked over the fire to be the only good beans. We use canned beans a lot, refried and whole. Mostly black beans.

Ok so my guess is this... Rick would probably prefer to use hone cooked beans but for the sake of the mini series he probably chose canned beans because thats whats is accessible and likely to be used by the masses. My guess is he would rather someone use the canned ones and actually make the recipe than get overwhelmed with homemade and avoid it. Dont get me wrong, im on team homemade but thats my guess.
