Rick's take on the ever popular chicken al pastor, in the Indoor Smoker
Al Pastor Marinade Recipe:
Ingredients-
DRIED CHILIES: 2-3 guajillo peppers or 1 tablespoon ancho chili powder
ACHIOTE PASTE: 2 tablespoons (adds smoky flavor and reddish color, but not essential)
CITRUS: ¼ cup pineapple juice and ¼ cup orange juice (or ½ cup of either)
AROMATICS: 3 garlic cloves
SPICES: 1 ½ teaspoons cumin, 1 teaspoon dried oregano, ¼ teaspoon black pepper
ACIDITY: 1 tablespoon apple cider vinegar (or white vinegar)
SALT: 2 teaspoons kosher salt (to taste)
Instructions-
If using dried chilies, toast them in a pan for a few minutes until fragrant. Soak them in hot water for 10 minutes to soften. Remove stems and seeds (optional for less heat).
Combine all ingredients in a blender and blend until smooth. You can add a little water or more citrus juice if the mixture seems too thick.
Add your chicken to the marinade and toss to coat. Marinate for at least 30 minutes, but preferably overnight for best flavor.
Tips-
You can find achiote paste in the Latin American section of most grocery stores.
If you don't have guajillo peppers, ancho chili powder is a good substitute.
This marinade can also be used for chicken or tofu.
