Ingredients:
1/2 lb. Farfalle, dry
1 lb. Ricotta, drained
Zest and Juice of 2 lemons
1/2 cup Roasted Red Peppers, diced
1/4 cup Basil, torn
Salt and Pepper
Method:
1. In a pot of boiling salted water, add farfalle and cook until the desired doneness.
2. In a large mixing bowl, add ricotta, lemon zest & juice, and some pasta liquid. Continue to add pasta water, while stirring ricotta until a sauce-like consistency is formed.
3. Add basil and any additional seasoning or pasta water needed.
