A spicy seasonal roast Jerusalem Artichoke salad is a great way of adding this vegetable to your winter salad selections. This salad can be eaten warm or cold, makes a great stand-alone starter, or can be part of a mixed salad plate or side dish.
Preparation time 30-40 minutes
Ingredients:
400g cubed roast Jerusalem Artichoke
50g chopped dates
50g sliced almonds
50g pomegranate seeds
1-2 teaspoons harissa paste

I’ve only used these in beef stew. I have plenty in the garden right now. Thanks for an idea for a new recipe.

Looks great! Have the 'chokes in the garden, and all other ingredients in the kitchen. Just need to get some harisa paste at the local Iraqi market! Thanks much!

They have a tendency to do this. They are one of the worst vegetables for that

If you add lemon juice and vinegar and boil them first they won’t bring gas once roasted

Sorry we cant remember. It was probably just what we had in the pantry which is usually olive oil or a it may have been a lovely garlic flavoured rape seed oil that is produced locally by Crush Foods in Norfolk. It may show the container on the video. I will re view it

It looked great ..... till you put the dressing...... and the other garbage. You could have roasted them with garlic and rosemary if you wanted more flavor.

Thank you for the feedback Mara we'll give it a try
