Looks great. I do Sauerkraut the same way, I just put it on a strainer and wash in water first, it is less acid then. At about 5-10 minutes before it's done I mix in a grated potato, it makes a little different kind of the "Zelí". And I prefer use pork lard to oil.

Honestly, IDK why is everyone still cooking it this way. Moravian style sauerkraut is not what modern people want to eat, no texture, just acidic and oily, plus bread dumplings just take all the pork juice in and turn yucky. This is why we use czech style saeurkraut (half-sweet, thinly sliced, just lightly roasted with onion to keep crunchy), and potato dumplings.

We've eaten it this way for decades! The recipe came from my Great Grandmother who was born in Czechoslovakia.... If you don't like it this way, move all. We all have our own family traditions and *LOVE* them...

@@goose7574 Meat juice and bread dumplings are terrible combination. These duplings are intended for meals with sauce, roasted meat lets out too "watery" juice which destroys their texture. Just because you are eating it wrong all the time, does not mean there is not a better way to cook the same dish.

@@Pyrochemik007 We make potato dumplings for ours... (Potatoes, egg, flour, and a little bit of semolina/cream of wheat, is how my Grandmother made them for decades) Eat what *YOU* want, and let others do the same. If some want a flour/bread dumpling or a potato dumpling, just chill! Their food *ISN'T* Affecting you! 🙄 People make chicken and "flour" dumplings all the time, and they don't complain about the texture. It also depends on how you cook it, because you can actually get a very similar consistency depending on how you boil the flour ones. I know, because I've done it before. Just stop being such a Negative Nancy... It's truly disgusting!
