I made this the other day for my wife & I. It was fantastic. We had it for a couple of meals & then I used what was left as a base for some pasta. I sauteed a yellow (brown) onion, 2 stalks of celery, & 2 carrots in some olive oil. All diced along with some garlic powder, basil, oregano, balsamic vinegar, a bit of Madeira port, & a 28 oz. can of San Marzano tomatoes. I also threw in some diced hot Italian stuffed pork tenderloin that I had made a couple of days earlier & sauteed it with the veggies. This was all done in an electric pressure cooker on low pressure for 4 minutes. When the pressure naturally released I added some rotini pasta, mixed it in & pressure cooked (low) for a minute. The flavors were unbelievably good. The original soup was great on its own & a great base for the pasta sauce. It's so much fun experimenting with recipes & coming up with enjoyable food to serve with loved family & friends.
This recipe is wonderful in every step, The tomatoes before being put in the oven are amazing, I almost go crazy and eat them as they are with onions and olive oil. And after roasted, I wish eat it with toasted bread, but after it became a soup, it became in its best looks and taste. It's super awesome, especially with this beautiful golden dome.
