I've roast sweet potato and made a soup but not all of those veggies, garlic, ginger and feta..... It's so good!!! Our son said that it's the only way they make soup now with roasted veggies. He calls me every so often and asks for help with a recipe!! Haha but pretty much he got this. Raymond had a really big share of this soup and I gave a bowl to my mom and aunt clara. We are having a busy week but the weather is going to be nice tomorrow for the next four days. So wonderful!!! The garlic buns are a lovely touch to this recipe.... How messages pop back up after months. Sorry I'm just seen your message. You can use a cream to replace the creamy part of the soup. I'm thinking the feta cream is also for that sharp taste of that cream. Our son and wife is always this time of the year trying different ways to make soups. I have a horrible stomach. I know ginger is good for it, and I usually spend a small fortune on ginger and lemon tea. Can you make ginger tea with the peeling? I love broths as well. Can you make a vegetable or o nion broth for us please? Also Steven sounds like a little Raymond.
Yes you can make a ginger tea with the peels. Because we leave a lot of ginger on the peels the flavour and heat is still there. I also have a video here for chicken and beef broth, you can leave out the chicken or beef and make vegetable broth. Steven is a chip of the old block for sure, he is so much like his dad. Any grandmother from the Martimes would have been throwing a spoon at ya if she caught you wasting good vegetable peelings eh... I can imagine this soup with parsnips and rutabagas or almost any other root vegetables the compliment each other like what Steven and his wife came up with.
Yes for sure!! But we don't waste it we give them to our local farmers for their goats and sheep. Raymond's Brother Winston owned five goats and we always dropped the old peels off to him for his goats. The ginger peels always go in water for my ginger and lemon tea., In the fall I keep the peel on because they are just out of the garden and I only wash them. But now the peels are bitter and hard.
