Rocky Road Brownie with Graham Crust for the indecisive dessert lovers who can't choose between a brownie or a cheesecake. With rich chocolaty brownie sitting on top of graham crust, have it with black coffee or a scoop of ice cream.

/INGREDIENTS for a 25cm/10 inch pan
|||||| Graham Crust
112g Graham Crackers
100g Unsalted Butter Melted
|||||||| Brownie Batter
80g All Purpose Flour
Pinch of salt
1/2 tsp Baking Powder
70g Milk Chocolate Callets
40g mini Marshmallows
2 Eggs (room temp)
80g Granulated Sugar
20g Brown Sugar
56g Canola Oil
[Double Boil Chocolate Batter]
100g Dark Chocolate Callets
56g Unsalted Butter
12g Cocoa Powder
1 tsp Vanilla Extract
1. Double boil dark chocolate, butter till melted, turn off heat and add cocoa powder and vanilla extract.
2. Chop milk chocolate callets into smaller chunks, toast hazelnuts and crush, add to a bowl of marshmallow. Mix and divide into two portions.
3. In a larger bowl, whisk eggs, granulated sugar and brown sugar till incorporated and add canola oil. Add in warm chocolate mixture.
4. Add or sieve in flour, salt and baking powder and mix.
5. Add one portion of marshmallow, hazelnuts and milk chocolate.
6. Bake for the first round for 20mins at 180°c, remove from oven, sprinkle the second portion of marshmallow, hazelnuts and milk chocolate mixture.
7. Bake again for another 5-7 minutes at 180°c
