I work for a company who has a large pizza oven and we're rocking 100 + per hour , ive never used a oven like that period , but i picked up the rotation process .

That's amazing rotation to cope up hundreds of pizza waiting takeout orders,delivery orders,and dine in orders....FANTASTICO!!!!!

Impressive!! The oven I work is wood fired and less than 1/2 the size. I think my record was about 56 pizzas an hour. I thought I was fast.. 250 is insane!

I should add that my record was based off of cooking for 10 straight hrs. I have no idea how long this guy could keep the 250 pace for! Although that oven looks big enough to have two people work it. So cool!

Wood pizza and gas version are completely different. Wood is far better

If you work alone (spread the dough, garnish, answer the phone, cash register...) 50 pizzas per day are good.

That's the most productive pizza oven I've ever seen. Great job!!! I guess you have 3-4 pizzaiolos working at the same time. Is that right?

I'm impressed, but what about real-world installations? Fire suppression system codes vary from state to state, county to county. I imagine this is your test kitchen? I'll dig around your website a bit, but I am very much liking this Fire Deck Series!

The problem with this is the skilled labor required to both work the pies in the oven, and toss and make enough pies to max that capacity out.

You're a real professional pizza maker, just the way you handle the pizzas turning and moving is on point. What is the temperature of the oven during the filming? Forno Bravo and all those overpriced pizza ovens is a complete joke with their stupid one nozzle big gas flame...

Presumably this is why conveyer ovens were made. Are there HI temp versions..?

We measure the temperature of our ovens with thermocouples approximately 1" beneath the floor, meaning the dome is much, much hotter. We also have special arches available to retain heat and make the chamber event hotter, should you desire. That said, no matter what you're cooking, our ovens will sustain the temperatures you need! @@davinci234 If you are referring to the oven featured in this video - no, all of these flames in this oven are natural gas. That said, we do offer solid fuel (wood/coal) options in similar models. Hope that helps!

@@Crusuma A friend owns a shop, he uses a conveyor oven. Charges 20 bucks for a 14" pie (inflation) due to this administartaion.
