I make a version of this sandwich I call Pogachoni, which is an acronym for Potato, Garlic, cheese, and onion which are the main ingredients in the sandwich. It has a mayonnaise sauce with onion and garlic powder mixed in. I use the same method to make the bread, but I cut it differently to make pocket bread. Instead of cutting it in half horizontaly, I just cut it vertically in half and then break open each half into a pocket. The secret to the best flavor is to roast potato slices and onions inside the wood oven so they have a char flavor, and then stuff all the ingredients into the pocket bread. It tastes amazing and the potato is the star of this sandwich. Try it. Pogachoni

We have the same name as this sandwich but the dough has oil mixed in. We put cheese in the middle and fold it snack size and leave to rise before putting eggwash on top and baking... amazing how we use the same name!

Fire oven bread is sooo delicious! There is a place at "The Pottery" in Virginia that makes fire oven Indian (as in native American) bread...to die for! I had it with the steak...a lasting memory which is better than excellent. This video makes me want to build a fire oven in my yard!
No cheese...no sauces...no butter..pure baked bread flavour and the flavour of the toppings.....simple and amazing ..I might start eating sandwich without mayo and the like...just because of this recipe

Hi jupe367 , sorry to let you down but this is not our staple food , it’s more an Italian food manipolate to please the international taste . Nothing wrong with it but you got the wrong conclusion. anyway I just want to say that any dressing including mayonnaise and ketchup you cannot call Italian , we use extra virgin olive oil instead. ( very far from the processed food you mostly use) And the most important thing it’s not what you eat but the way you live and the relationship you have with food , as an explanation I would say that many people in Italy coltivate in their backyards theirs own vegs. totally agree! younger Italians are now beginning to eat like this, and the results on their weight are readily apparent. but these are not traditional Italian sandwich fillings.
