Ingredients :
500g White Flour
200 - 250g Warm Milk
100g Melted Butter
3 Egg Yolks
100g Sugar
14g Dried Yeast
Lemon zest from 1Lemon
A pinch of Salt
1tsp Lemon Extract
1tsp Vanilla Extract
1tsp Orange Extract

For Filling :
400g Biscoff Cream
150g Ground Walnut

For Glaze :
200g Cream Cheese
50g Sugar
1tsp Lemon Extract

Add the yeast in a bowl, a bit of sugar ( about a spoon ), half of milk quantity, a spoon of white flour and mix everything using a whisk .Let the yeast rest for 10 minutes then add the rest of the ingredients : sugar, egg yolks , a pinch of salt, 1 teaspoon of orange extract,1 teaspoon of vanilla extract, 1 teaspoon of lemon extract , lemon zest from 1 lemon, white flour and knead the dough. Add the milk and melted butter gradually ( out of the 250ml of milk, I only used 200ml, it depends on how dry the flour is ).
Cover the dough with cling film and let it rest for an hour . Once the hour is up, take the dough onto a table which you've brushed with a bit of oil and slice it into 2 equal parts, then roll it into rectangular shape. Add half of the biscoff cream and spread it over the dough , and add half of the ground walnuts .Roll the dough and cut it into 9-10 equal rolls .
Place the rolls into a tray and repeat with the other half of the dough . I made 20 rolls in total .
Cover them up with a towel and let them rest for another 30 minutes. Then put them in a preheated oven and bake for 25-30 minutes at 180degreesC. Make the cheese cream in the meantime : in a bowl, add cheese cream, sugar and 1 teaspoon of lemon extract mix everything really well with a whisk until the sugar is dissolved. Once the rolls are done, take them out of the oven and brush them with the cheese cream .
You can serve them straight away !
