Eclairs are a great French dessert, made from choux pastry, filled with cream and then topped usually with fondant icing. For topping there are many variations, but making a simple and quick chocolate ganache seemed just perfect for me. Eclairs are a true delight and worth all the effort involved.

Ingredients
Makes 10-12 eclairs
For the choux pastry
1 cup (125 g) flour
3.5 oz (100 ml) milk
3.5 oz (100 ml) water
2 tsp (10 g) sugar
1/2 tsp salt
5 1/2 tbsp (80g) unsalted butter
4 eggs
Vanilla Pastry Cream
2 cups (480 ml) milk
2 tsp vanilla extract
4 egg yolks
1/3 cup (70g) sugar
1/3 cup (40g) cornstarch
1 tbsp (15g) unsalted butter
Chocolate Glaze
7 oz (200 g) chocolate (55-70 cocoa), cut in smaller pieces
2/3 cup (155 ml) whipping cream
1. First prepare the pastry cream to have it ready by the time the eclairs are baked.
2. Whisk the egg yolks with sugar until slightly pale.
3. Incorporate the cornstarch. Pour the milk into a saucepan and bring to a simmer. Pour about a third of the hot milk over the egg
yolks mixture. Pour the whole mixture into the saucepan over the milk. Bring to a boil while stirring and thickens. Keep enough over
heat to cook all the cornstarch. Add vanilla extract.
4. Pour the cream into a clean bowl and allow to cool for 10 minutes then incorporate the butter while stirring. Cover with plastic wrap, pressing it directly onto the surface of the pastry cream to prevent forming a skin on the surface. Set aside until ready to use.
5. Preheat oven to 350F (180C).
6. Prepare the choux pastry. Sift the flour. In a saucepan bring the milk, water, sugar, salt and butter to a boil.
7. Remove from heat and add flour all at once and incorporate mixing energetically with a wooden spoon until homogenous. Return the saucepan over low heat and while stirring cook for 1 minute or two to pull out the moisture from the batter and until it
pulls away from the sides of the pan. You will see some of the dough sticks to the bottom of the pan.
8. Transfer batter to a large bowl and allow to cool slightly. Add the eggs one at a time, carefully incorporating each into the
butter using the wooden spoon or even a stand mixer. It will result in a smooth, homogenous batter which still holds it’s shape.
9. Fit a pastry bag with a large ½ inch (1 cm) round or star tip and pipe the dough into 4 or 5 inch (10 -12 cm) long strips on a
parchment paper lined baking sheet.
10. Dust with powder sugar and bake for about 40 minutes. After the first 10 minutes, open the oven door slightly, about 1/8 inch (2
-3 mm), to let the steam escape. Bake for the rest of 30 minutes with the oven door slightly ajar, until golden. (Use a wooden spoon
to keep the oven door ajar)
11. Remove eclairs from the oven, prick each with a skewer to release steam and allow to cool on a wire rack. Poke 3 holes in the base of each eclair using a 1/4 inch (5-6mm) plain or star tip.
12. Remove pastry cream from refrigerator and whisk until smooth. Transfer the pastry cream into a piping bag fitted with 1/4 inch (5-6 mm) plain or star tip.
13. Fill the cooled eclairs by piping cream into the holes.
14. Prepare the chocolate ganache. In a small saucepan, place cream over medium-low heat for a few minutes to get hot. No boiling or simmering needed. Remove from heat, pour over chopped chocolate and let rest for 1-2 minutes. Stir until dissolved.
15. Dip the tops of the eclairs into the chocolate and allow to set. You won’t need all the chocolate but needs to be more to be able
to dip them well.
16. Eclairs are best eaten the day they are made but they keep quite well in the refrigerator overnight.

Recipes like this are the reason I finally broke down and bought a food scale to weigh dry ingredients for my baking, instead of measuring by cups or spoons. The accuracy really is the secret to success :)

Next time please make the holes on top to fill the filling and then cover eclairs and holes with the chocolate. This way eclairs won't create any mess when you bite into them.

the recipe for the choux pastry is not accurate. I added salt, sugar, 100 ml milk, 100 ml water, 5 1/2 tbs of butter and eggs. Did everything that they showed and the dough turned out liquidy and not think like they show on the video... the filling also turned out thick as hell. smh

Sometimes you don't need all the eggs for the dough, so you might have added too much and it came out runny. Idk abt the cream though

I did them twice with exactly the measurements mentioned in the video and description. Turned out perfect. What else is there to say than try it again with accurate measurements? Maybe your eggs are bigger than the ones in the video?

I tried this and like it said in the video it’s with the effort. I tried this 2 times, first I let the oven door open and it didn’t rise, it was just flat. The next time I did I left it closed and it was perfect and hollow. Would definitely recommend

I made this recipe based on your video and it turned out awesome! Only thing I did slightly different is I put the dough in the fridge for about 10 minutes, since I live in a tropical country, and was afraid it would just melt in the oven. I wanted to ask you about the filling. Mine was good, but it smelled and tasted a bit too much of eggs. Do you have any tricks to prevent this?

I did the exact measurements but my batter was too runny! I ended up pouring the batter into one big square so when they’re cooked and cooled I’ll cut them into small squares instead. I hope they’ll cook properly because of the batter being runny. Wish me luck🙏🏻 also can someone tell me what went wrong? I did the EXACT mesurements😔😣

You maybe didn't cook the dough long enough? Or added the eggs too early on and therefore the steam did not escape, either that or your eggs were too large so you added too much eggs! Choux dough doesn't have an exact amount of eggs, you stop whenever the consistency is right :)

This is great, may I also have Chocolate Eclairs? Jenny Sophorn I will try adding the grams in the description of the videos at least :) As for the chocolate eclairs you can use the same recipe, just make another ganache from about 100-120 g of chocolate and 100 ml cream, and combine with the pastry cream to make a chocolate pastry cream.

When adding the eggs for the choux pastry, the mixture was very liquid and very different from the one in the video, so I added some more flour. After taking the eclairs out of the oven, they didn't have that "hole", like in the video.

Choux pastry is fairly easy, but there are a lot of variables that can mess with the consistency from one batch to the next. The size of the eggs, and how long you cooked the flour mixture before cooling it are two of the biggest culprits. When I make it, I beat the eggs in advance, and stir them in to the cooked flour mixture a little at a time until the thickness is right. That usually uses up all the egg, but not always. I also weigh the flour by grams instead of just measuring it by cup, because I've learned that makes a huge difference too.

its good but i would recommend u whipping the pastry cream with butter(creme mousseline) so that it becomes lighter as the pastry cream is really thick and heavy. but overall it looks really good

+Home Cooking Adventure I tried it, finally! I also messed a couple of things up, as you'd expect. Most important is the batter. I think it wasn't dried enough when I piped it on the paper. It couldn't hold its shape very well, and ended up rather flat. It had some space in some of the rolls, but most of them were too flat and I had to use a butter knife from the end to try and force them to hollow. Piping the filling in helped puff them up, but it couldn't fix it. I also, somehow, messed up the chocolate glaze. No idea how, but the chocolate didn't dissolve completely, and instead had this gritty look to it no matter how much I mixed. I even tried microrwaving the mix afterwards to force it to melt, but that didn't help. Next time I'm going to try melting the chocolate a little before combining it with the cream. That being said, the cooked batter was great, and combining it with the filling made it taste amazing. Seeing how I couldn't find proper eclairs around here, it's good that I know this recipe tastes right. I'll be making it again for sure.

If you use a mixer, you know theres enough eggs in the pate choux when the batter pulls creating ribbons. You can also do the finger test by taking a bit of the batter and smushing it between 2 fingers to see if you get that stringy effect. Elevation from sea level of where you are baking affects the moisture content of your baking IIRC my old baking theory classes. Your chocolate, I have a feeling some water got into it. Water lumps up chocolate when you try melting it. Its a common mistake that can't be fixed if a lot got in. Otherwise use a bit of butter or oil to help salvage it.

@@HeadlessChickenTO I'm actually coming around to do this again (took me only two years). I'm better at cooking now, and I will try this again out of pure craving. I will be more careful with the chocolate for sure. The tip about testing the batter is great! I'll use that for sure. Thanks!

I just made these today, didn't have this big nozzle, so mine are a bit smaller, but they taste amazing. Also, I split the custard into two bowls and added a tbsp of cocoa powder into one, so I made half vanilla, half chocolate. Delicious!

I just tried this recipe,the choux is good but the custard has too much cornstarch that’s not needed , but other than that it tastes delicious, I love your recipes 💘

my new oven is doing the same thing.. just leave it closed... and make sure you prick them with a skewer to remove steam

don't open the oven door, try adding a little bit mor salt into the choux paste (add more suger into the cream pastry to keep it sweet)

+Julie Armstrong I was thinking the same thing about holes. Seems to me that if they are on the bottom it's little too messy. Makes perfect sense to make holes on top and then cover them with chocolate. P.S. I've never seen store/bakery bought eclairs with holes on the bottom.

Best eclair/ puff pastry recipe ever!!!This recipe does not disappoint. I always have the crispy outter shell with the hallow center. No deflation, no need to poke extra holes to release the moisture, it holds it shape when cooled. Much love to you. Thank so much for sharing this recipe. PS I have tried several others before I came across your channel.

This is really late but if you add cream to the custard it’ll lighten it up, not to mention it is much easier to pipe.

I've made them yesterday! It took only 40 minutes to prepare it, amazing! I never did sweets like this, but they were delicious, thank you for the recepie! So easy and tasty) P.s: if someone will use 75% ore more chocolate, note that if you'll put too much on the eclere ,it will cover the taste of the cream)
